Ingredients

For Potato Stuffing

  • 3 Potatoes, boiled and peeled
  • 1 tablespoon Oil
  • 8 Curry Leaves (Kadi Patta)
  • 1/2 teaspoon Mustard Seeds (Rai)
  • 1/8 teaspoon Asafoetida (Hing), (optional)
  • 1 Green Chili Pepper, minced (optional)
  • 4 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1/2 teaspoon Ground Turmeric (Haldi powder)
  • 1/2 teaspoon Salt
  • 2 tablespoons Cilantro, finely chopped
  • 1-2 tablespoons Lemon juice

For Batter

  • 3/4 cup Gram flour (Besan)
  • 1/2 teaspoon Cayenne or Red Chili powder
  • 1/2 teaspoon Salt
  • 1/3 cup Water
  • 1/2 tablespoon Oil

Other Ingredients

  • 8 Dinner rolls (Pav)
  • 2 tablespoons Ghee or Butter
  • 2 tablespoons Chili Garlic Chutney, dry
  • Mint Cilantro Chutney
  • Tamarind Chutney

Instructions

  1. Prepare the Batter: In a bowl, mix gram flour, cayenne powder, salt, water, and oil to form a thick, smooth paste. Let this batter rest while preparing the potato stuffing.
  2. Make the Potato Stuffing: Mash the boiled and peeled potatoes until broken but not mushy. Heat oil in a pan over medium heat. Add mustard seeds and curry leaves; cook until mustard seeds pop. Add asafoetida, minced green chili, ginger, and garlic, sauté for 30 seconds until aromatic. Stir in salt, turmeric, and cilantro, then quickly add the mashed potatoes. Mix well, add lemon juice, combine thoroughly, and remove from heat to cool.
  3. Shape Potato Balls: Using your hands, form small to medium-sized balls from the cooled potato stuffing.
  4. Deep Fry Method: Heat oil in a deep pan. Smooth the batter again, dip each potato ball to coat evenly, then carefully deep fry until golden brown on all sides. Remove and drain on paper towels.
  5. Air Fryer Method: Brush the air fryer grill pan with oil. Smooth the batter, dip potato balls to coat evenly, and place them on the pan with space between each. Air fry at 390°F for 14 minutes, checking halfway through. Remove carefully once crisp and golden.
  6. Prepare the Slider Buns: Slice the dinner rolls horizontally. Heat butter or ghee in a pan over medium heat and toast the cut sides of the rolls lightly, turning to toast both sides, if desired.
  7. Assemble the Sliders: Spread tamarind and mint cilantro chutneys on both sides of the buns, sprinkle with dry chili garlic chutney, place a potato fritter inside each bun, and gently press. Serve immediately.

  • Stovetop variation: The spiced potato balls can also be deep fried in hot oil on the stovetop if an air fryer is not available.
