Ingredients

For the Crust

  • 3 cups oat flour
  • 1 cup almond flour
  • 10 pitted dates, soaked

For the Filling

  • 1 cup full-fat coconut milk
  • 1 cup unsweetened almond milk
  • 3 tbsp sugar
  • 4 peaches, pitted
  • 1 tsp lemon juice
  • 1 tbsp corn starch
  • 1/2 tsp vanilla extract
  • 2 tsp agar agar (or gelatin if not vegan)

Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). Soak the dates in hot water to soften. In a food processor, blend the oat flour and almond flour. Add the soaked dates, maple syrup, melted coconut oil, and pink salt, and blend until the dough is sticky and well combined.
  2. Form and bake the crust: Lightly grease a tart tin and press the dough evenly into it. Use a fork to poke holes in the bottom of the crust to prevent bubbling. Bake for 9 to 12 minutes until set and lightly golden. Remove from oven and let cool completely.
  3. Make the filling: In a high-powered blender, combine the coconut milk, almond milk, sugar, pitted peaches, lemon juice, and vanilla extract. Blend until smooth and creamy.
  4. Cook the filling: Pour the blended mixture into a saucepan. Add corn starch and agar agar, then heat over medium heat, stirring continuously until it reaches a brief boil and thickens slightly.
  5. Cool the filling: Transfer the cooked filling into a bowl and let it cool to room temperature.
  6. Assemble the tart: Pour the cooled filling into the prepared crust. Refrigerate the tart overnight to allow the filling to set firmly.
