Ingredients
Pizza Base
- 1/2 pound ball of pizza dough
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, chopped
- Chili flakes, to taste
Sweet Toppings
- 2 teaspoons honey, divided
- 2 teaspoons fig preserves
- 1 peach, thinly sliced
- 1 tablespoon balsamic vinegar
Cheeses
- 1/2 cup shredded mozzarella cheese
- 3/4 cup shredded gouda cheese
- 3/4 cup shredded fontina cheese
Meat
- 3 ounces prosciutto
Garnish
- So much fresh basil (about two big handfuls)
Instructions
- Preheat Oven: Set your oven to 450°F (232°C) to ensure it reaches the ideal temperature for baking the pizza to a crispy golden crust.
- Shape Dough: On a lightly floured surface, press or roll out the pizza dough into a thin circle approximately 10 to 12 inches in diameter. Transfer this dough carefully to a baking sheet.
- Prepare Crust: Lightly brush the surface of the dough with extra virgin olive oil. Evenly sprinkle fresh thyme leaves, chopped garlic, and chili flakes over the dough for aromatic and subtle heat flavors.
- Add Honey and Fig Preserves: Drizzle 1 teaspoon of honey and spread the fig preserves gently across the surface of the dough, rubbing them lightly to distribute flavor evenly without overpowering.
- Add Cheeses: Evenly layer the shredded mozzarella, gouda, and fontina cheeses over the prepared dough, creating a rich and melty base for the toppings.
- Prepare Peach Topping: In a small bowl, toss the thinly sliced peaches with the remaining 1 teaspoon of honey and balsamic vinegar to enhance their sweetness and add a slight tang.
- Assemble Pizza: Arrange the honey-balsamic peaches evenly over the cheese. Scatter slices of prosciutto across the top to add a savory, salty dimension.
- Bake: Place the pizza in the preheated oven and bake for 10 to 15 minutes. Bake until the crust is golden brown and the cheeses are bubbling and melted.
- Garnish and Serve: Remove the pizza from the oven and immediately top with two big handfuls of fresh basil leaves for an aromatic finishing touch. Slice and serve warm.
Notes
- For an extra crispy crust, preheat your baking sheet or pizza stone before placing the dough on it.
- If fresh peaches are not available, ripe canned or frozen peaches can be used but drain them well to avoid sogginess.
- Adjust chili flakes to your preferred spice level or omit if sensitive to heat.
- The combination of mozzarella, gouda, and fontina cheeses creates a perfect balance of stretchiness, flavor, and creaminess.
- Use prosciutto slices just before baking to avoid drying them out; if desired, add extra slices fresh after baking for more pronounced flavor.
