Ingredients

Puff Pastry Base

  • 1 round puff pastry (thawed)

Cheese & Dairy

  • ¼- cup ricotta cheese or cream cheese
  • 8 cubes firm mozzarella, fontina, gruyere or Swiss cheese
  • 1-2 tablespoons milk

Meat

  • 8 slices prosciutto, ham or salami (or a mixture)

Extras

  • 4-8 black or green olives
  • 2-3 pinches oregano
  • 1-2 tablespoons seeds (poppy or sesame)

Instructions

  1. Score the Puff Pastry: Place the round thawed puff pastry on a sheet of parchment paper. Using a sharp knife or pizza cutter, make 8 cuts from the outer edge toward the center, stopping about 2 inches (5 cm) before the middle. Then turn the pastry slightly and make 8 more cuts in between the first ones, ending up with 16 equal points.
  2. Spread the Ricotta: Evenly spread ricotta cheese all over the puff pastry base, leaving a 1 inch (2 cm) border around the edges to prevent overflow during baking.
  3. Add Filling and Fold Tips: Place a folded slice or piece of prosciutto or ham and a cube of cheese in the middle of each triangle. Carefully bring each tip of the wedge toward the center to cover the filling entirely, sealing edges with wet fingers to ensure it sticks properly.
  4. Top Inner Triangles: Add a small cheese cube to each of the smaller inner triangles. Fold each point outward over the cheese and secure the tips with whole or halved black olives. This prevents them from rising excessively in the oven. Sprinkle oregano over the ricotta, brush the puff pastry with milk, and sprinkle poppy or sesame seeds on top.
  5. Chill Before Baking: Place the assembled star on a large baking sheet and chill in the refrigerator for 20 minutes while you preheat the oven to 375°F (190°C). This helps the pastry keep its shape during baking.
  6. Bake Until Golden: Bake the star for 20-25 minutes or until the pastry turns golden brown and puffed up. Remove from the oven and serve immediately for warm, melty cheesy bites.
