Blondie Batter:

Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving an overhang on the sides for easy removal of the blondies after baking.
- Prepare the butter mixture: In a large mixing bowl, whisk together the melted unsalted butter, pumpkin pie spice, and packed light brown sugar until fully combined. This helps to bloom the spices, enhancing their flavor.
- Add wet ingredients: Whisk in the large egg, egg yolk, blotted pumpkin purée, and vanilla extract into the butter mixture until smooth and well incorporated.
- Add dry ingredients: Gently stir in the all-purpose flour, cornstarch, cream of tartar (if using), salt, and baking powder just until combined. Avoid overmixing to keep the blondies tender.
- Add white chocolate chips (optional): Fold the white chocolate chips into the batter gently for pockets of creamy sweetness.
- Transfer to pan: Spread the blondie batter evenly in the prepared baking pan, smoothing the surface with a spatula.
