  • 200 g (1 ½ cups) brown crab meat, fresh or canned
  • 200 g (1 ½ cups) white crab meat, fresh or canned
  • 4 tbsp grated parmesan
  • 2 tbsp flat leaf parsley, very finely chopped
  • Pinch of red pepper flakes (to serve)

Pasta

  • 400 g (14 oz) linguine, cooked al dente
  • Reserved pasta water as needed (about 120 ml / ½ cup)

Instructions

  1. Prepare the base: Add the butter and olive oil to a large chef's pan and heat gently until the butter melts and starts to foam.
  2. Sauté aromatics: Add the finely diced shallots, minced garlic, salt, and sugar. Cook over low heat while stirring for 5 minutes or until the shallots soften and become translucent.
  3. Add tomatoes: Stir in the diced fresh tomatoes and cook for about one minute until they start to break down slightly.
  4. Deglaze and simmer: Pour in the white wine and lemon juice, bringing the mixture to a simmer. Increase the heat and cook for around 5 minutes until the wine aroma dissipates and the sauce slightly reduces.
  5. Add brown crab meat: Stir the brown crab meat into the sauce, allowing it to heat through and absorb the flavors.
  6. Cook linguine: While preparing the sauce, cook the linguine in salted boiling water according to package instructions until al dente. Reserve about 120 ml (½ cup) of the pasta water before draining.
  7. Combine pasta and sauce: Stir the drained linguine into the pan with the sauce. Add the white crab meat and grated parmesan, mixing well. Incorporate some reserved pasta water as needed to loosen the sauce to desired consistency.
  8. Finish and serve: Toss in the finely chopped parsley to combine. Taste and adjust seasoning if necessary. Serve sprinkled with extra parsley and a pinch of red pepper flakes for a subtle heat.
