- 1 lb Ground Chicken

- 1/4 cup cilantro leaves
- 2 tbsp besan (chickpea flour)
- 1 tbsp yoghurt
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp chili flakes
- 1/2 tsp chaat masala
- 3/4 tsp coriander powder
- 3/4 tsp cumin powder
- 3/4 tsp garam masala
- 1.5 tbsp lemon juice
For Cooking and Serving
- 2 tbsp butter (divided, 1 tbsp for mixing, 1 tbsp for basting or cooking)
Instructions
- Prepare the Spice Paste: Add the chopped onion, green chilies, cilantro, ginger, and garlic to a food processor. Blitz until roughly chopped to create a fresh herb and spice base.
- Mix the Ingredients: Add the ground chicken, besan, yoghurt, salt, chili powder, chili flakes, chaat masala, coriander powder, cumin powder, garam masala, lemon juice, and 1 tablespoon of butter to the food processor. Blend on high speed until a cohesive and smooth paste forms.
- Shape the Kababs: Grease your hands or wear gloves to prevent sticking. Shape the mixture into kababs on skewers or freehand, about 5-6 inches long, ensuring they hold together well.
- Cook on the Grill: Preheat your grill to high heat. Place the kababs on the grill, cover, and cook for 4-5 minutes. Uncover, turn them over carefully, and cook for an additional 2 minutes. Check one kabab for doneness—juices should run clear and meat firm but tender—and remove from the grill once cooked through.
- Cook on the Stovetop: Alternatively, heat a pan over medium-high heat and drizzle with a little oil. Place kababs in the pan and cook each side for 2-3 minutes until evenly browned. For a softer exterior, reduce heat to medium but do not go lower. Baste kababs with additional melted butter during cooking for enhanced flavor.
