These quick smashed Greek potatoes with feta and rosemary are a delicious and easy side dish that combines tender, smashed roasting potatoes with salty feta cheese, fragrant rosemary, and a hint of garlic and lemon. Perfectly cooked in the oven or air fryer, they make a flavorful, Mediterranean-inspired accompaniment to any meal.

  • Total Time: 32 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 8-12 medium roasting potatoes

Other ingredients

  • 200 g (7 oz) feta cheese, crumbled
  • 3 tbsp small capers or sliced black olives
  • 2 large whole cloves of garlic, sliced
  • 1 red onion, sliced into very thin rounds
  • 1 small rosemary sprig, torn
  • 1 lemon, cut into quarters
  • Olive oil, to drizzle
  • Salt and pepper, to season

Instructions

  1. Preheat and prepare cooking vessel: Preheat the oven to 200°C (400°F). Lightly drizzle a large skillet or roasting tray with olive oil to prevent sticking.
  2. Microwave the potatoes: Rinse the potatoes and pierce them all over with the tip of a sharp knife. Place in a microwaveable bowl and cover with two sheets of damp paper towel. Microwave on full power for 7-12 minutes, checking after 7 minutes by piercing with a knife. Continue cooking if not tender.
  3. Smash the potatoes: Transfer the cooked potatoes to the oiled skillet or roasting tray. Using a potato masher, gently smash each potato to expose some flesh but keep their shape intact.
  4. Season and add aromatics: Drizzle olive oil over the smashed potatoes, then season with salt and pepper. Scatter the sliced garlic and torn rosemary over the potatoes and nestle lemon wedges throughout.
  5. Initial roasting: Roast in the oven for 10 minutes until the potato skins start to brown and crisp.
  6. Add feta, onion, and capers: Remove from the oven, sprinkle crumbled feta cheese, thinly sliced red onion rounds, and capers or olives on top. Return to the oven for another 5 minutes to allow flavors to meld and the feta to soften.
  7. Finish with lemon juice and serve: Squeeze fresh juice from the roasted lemon wedges over the potatoes and serve immediately while warm.
  8. Air fryer option: For air frying, follow the same steps but place the smashed potatoes directly into the air fryer basket instead of the skillet or roasting tray. Cook as directed.

Notes

  • Use 2-3 medium potatoes per person for a generous side dish portion.
  • Microwave cooking time may vary depending on your microwave's power and potato size; check tenderness at 7 minutes.
  • Capers can be substituted with sliced black olives if preferred for a different flavor profile.
  • Ensure potatoes are pierced all over before microwaving to allow steam to escape and cook evenly.
  • For a crispier finish, drizzle extra olive oil before the final roasting step.
