Ingredients
Vanilla Pudding Dip
- 1 large egg yolk
- 1/3 cup granulated sugar
- 1 cup 2% or skim milk
- 2 tablespoons cornstarch, mixed with 2 tablespoons water
- 1/2 tablespoon unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 cup plain Greek yogurt
- 1/4 cup sweetened whipped cream
Fruit Kabobs
- 1 lb strawberries, halved
- 2 medium bananas, cut into 1-inch thick pieces
- 1 cup fresh blueberries
Instructions
- Prepare the Vanilla Pudding Dip: Place the egg yolk in a small bowl and lightly beat until smooth. Set aside.
- Heat Sugar and Milk: In a medium saucepan, combine the granulated sugar and milk and heat over medium heat until the mixture is steaming.
- Temper the Egg Yolk: Slowly drizzle 1/2 cup of the warm milk mixture into the beaten egg yolk, beating constantly to prevent curdling and create a smooth blend.
- Cook the Pudding: Add the egg yolk mixture along with the cornstarch-water mixture to the saucepan. Cook over medium heat, whisking occasionally, until the mixture becomes bubbly and thickened like pudding.
- Finish the Pudding: Remove from heat and whisk in the softened butter and vanilla extract. Allow the pudding to cool slightly, then transfer to a bowl and press plastic wrap directly on the surface to prevent a skin from forming. Chill in the refrigerator for 30 minutes.
- Fold in Creamy Elements: After chilling, remove the pudding and gently fold in the Greek yogurt and sweetened whipped cream. Return the dip to the refrigerator until ready to serve.
- Assemble the Fruit Kabobs: Thread the halved strawberries, banana pieces, and fresh blueberries evenly onto 8-10 skewers to create colorful red, white, and blue kabobs.
- Serve: Serve the fruit kabobs immediately with the chilled vanilla pudding dip and enjoy your festive treat.
Notes
- Use fresh, ripe fruit for the best flavor and appearance.
- Pressing plastic wrap directly on the surface of the pudding prevents a skin from forming while chilling.
- To keep bananas from browning before serving, toss them briefly in lemon juice.
- The pudding dip can be made a day in advance and refrigerated until needed.
- For a richer pudding, 2% milk can be used over skim milk.
