Instructions
- Mix oat ingredients: In a large bowl, whisk together the rolled oats, almond milk, Greek yogurt, crunchy peanut butter, 2 tablespoons of mini semisweet chocolate chips, and vanilla extract until well combined. Refrigerate uncovered for about 30 minutes until the mixture is set and slightly thickened.
- Melt chocolate topping: While the oats chill, place the remaining 3 tablespoons of mini semisweet chocolate chips and the coconut oil in a small microwave-safe bowl. Microwave on high for 45 to 60 seconds, then stir until the chocolate chips are completely melted and combined with the oil, creating a smooth chocolate mixture.
- Assemble jars: Divide the oat mixture evenly among 4 jars (8-ounce each), filling about 1 cup per jar. Spoon approximately 2 teaspoons of the melted chocolate mixture onto the surface of each jar, tilting slightly to cover the top evenly.
- Set chocolate topping: Refrigerate the jars uncovered for about 10 minutes to allow the chocolate layer to set just enough.
- Finish and store: Sprinkle flaky sea salt over each jar's top chocolate layer, then cover and refrigerate for at least 12 hours or up to 4 days until the oats have thickened fully and the chocolate topping is completely solidified. Serve chilled.
