Instructions
- Simmer the oats: In a small saucepan, combine steel cut oats, unsweetened almond or oat milk, vanilla extract, cinnamon, and sea salt. Bring the mixture to a gentle simmer over medium-high heat. Once it starts bubbling, continue simmering for one minute, then immediately remove from heat to prevent overcooking.
- Add nut butter and sweetener: Off the heat, whisk in the nut butter or tahini and honey (or maple syrup) until fully dissolved. The nut butter or tahini will slightly thicken and enrich the oat mixture, creating a creamy texture.
- Incorporate chia seeds: Stir in the chia seeds thoroughly to help thicken the oats and add nutritional benefits.
- Transfer and cool: Pour the oat mixture into a large glass Tupperware container or four smaller resealable pint-sized glass jars. Allow the mixture to cool slightly at room temperature before sealing.
- Refrigerate overnight: Cover the container(s) and refrigerate for at least 8 hours, or up to 5 days, allowing the oats to absorb the liquid and soften further into a creamy consistency.
- Serve: Enjoy the oats cold directly from the fridge or gently reheat in the microwave. Add optional toppings such as extra nut butter, a sprinkle of cinnamon, sesame seeds, sliced strawberries, raspberries, sliced bananas, hemp seeds, or chopped nuts for added flavor and texture.
