Ingredients
Chicken
- 1 lb. boneless skinless chicken thighs
- 1/2 tablespoon soy sauce
- 1/2 tablespoon avocado oil
- 1 clove garlic, grated (or 1 tsp garlic paste or 1/2 teaspoon garlic powder)
- 2-3 tablespoons taco seasoning (Siete brand recommended)
Green Sauce
- 1/2 avocado
- 1/2 cup mayo
- 3-ounce chunk of cotija cheese
- 1 big handful of cilantro stems and leaves (roughly 1/2 cup)
- 1 clove garlic
- Juice of 1-2 limes (about 2 tablespoons)
- 2 tablespoons water (more as needed)
To Serve
- Tortillas
- Limes, cilantro, and diced onion for topping
Instructions
- Season the Chicken: Trim any excess fat off the chicken thighs if desired. In a bowl, toss the chicken with soy sauce, avocado oil, and grated garlic. Sprinkle the taco seasoning over the chicken and mix well to evenly coat all pieces.
- Cook the Chicken: Place the seasoned chicken thighs in the basket of an air fryer. Cook at 400°F (204°C) for 10-12 minutes until the exterior becomes crusty, golden, and the inside remains juicy and cooked through.
- Make the Sauce: While the chicken cooks, combine the avocado, mayo, cotija cheese, cilantro stems and leaves, garlic clove, lime juice, and water in a small food processor or blender. Blend until smooth. Adjust the consistency by adding more water if too thick or more avocado/mayo if too thin.
- Chop the Chicken: Let the cooked chicken rest for a few minutes, then roughly chop or pull it apart into bite-sized pieces. Squeeze additional lime juice over the chicken for extra brightness.
- Assemble and Serve: Spread a dollop of the green sauce onto a warm tortilla, add a generous pile of the juicy chicken pieces, and top with fresh cilantro, diced onion, and extra lime if desired. Enjoy immediately for a delicious taco experience.
Notes
- If you don’t have an air fryer, the chicken can also be cooked on a stovetop skillet over medium-high heat until crusty and cooked through, about 6-8 minutes per side.
- Adjust the amount of taco seasoning based on your preferred spice level.
- The green sauce can be made ahead and refrigerated for up to 1 day, but it’s best served fresh.
- For extra texture, consider adding chopped onions or radishes as toppings.
