  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Green Hummus

  • 15 ounces canned chickpeas plus 1/4 cup reserved canned liquid
  • 1/4 cup tahini
  • 1 cup arugula
  • 1/4 cup fresh parsley
  • 1/4 cup fresh dill
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/4 cup extra virgin olive oil
  • Salt and pepper, to taste

Roasted Vegetables & Salad

  • 1 large head cauliflower, cut into small florets
  • 1 medium red onion, peeled and sliced into 1/4 inch thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sliced peppadew peppers
  • 1/2 cup sliced pitted kalamata olives
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon red chili flakes
  • Salt and pepper, to taste

Fried Feta

  • 4 ounces feta, cut into small chunks
  • 2 large eggs, lightly beaten
  • 1/2 cup all-purpose flour
  • 1/4 cup toasted sesame seeds
  • 2 tablespoons oil (for frying)

Honey Harissa Dressing & Assembly

  • 3 tablespoons honey
  • 1 tablespoon harissa seasoning
  • 4 pita bread
  • 1 tablespoon fresh dill for garnish

Instructions

  1. Preheat Oven: Set your oven to 425 degrees F to prepare for roasting the vegetables.
  2. Make Green Hummus: In a blender or food processor, combine chickpeas, reserved chickpea liquid, tahini, arugula, parsley, dill, lemon juice, and garlic. Blend until smooth. Slowly add extra virgin olive oil while blending until creamy. Season with salt and pepper, then set aside.
  3. Roast Vegetables: Toss cauliflower florets and sliced red onion with olive oil, dried oregano, garlic powder, salt, and black pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until the vegetables are charred and tender.
  4. Prepare Vegetable Salad: Remove roasted vegetables from the oven and mix with peppadew peppers, kalamata olives, extra virgin olive oil, red wine vinegar, and red chili flakes. Season with salt and pepper and keep warm.
  5. Prepare Fried Feta: Dip feta chunks into the beaten eggs to coat completely. Remove with a fork and dredge in flour. Dip again in eggs and then coat with toasted sesame seeds.
  6. Fry Feta: Heat oil in a small sauté pan over medium-high heat. Fry the coated feta pieces until golden brown on all sides, about 5 minutes. Remove and keep warm.
  7. Make Honey Harissa Dressing: Whisk honey and harissa seasoning together until well combined. Drizzle the mixture over the fried feta, reserving some honey for serving.
  8. Assemble Wraps: Toast pita bread lightly. Spread a generous layer of green hummus on one side of each pita. Top with the roasted cauliflower salad mixture and fried feta chunks. Drizzle additional honey harissa dressing on top and garnish with fresh dill. Serve immediately.

Notes

  • For extra crunch, you can add fresh cucumber slices or shredded carrots to the wraps.
  • Adjust the red chili flakes and harissa seasoning according to your preferred spice level.
  • If you prefer a gluten-free version, substitute pita with gluten-free wraps or lettuce leaves.
  • Use fresh herbs for the green hummus to maximize flavor and freshness.
  • Make sure to toast the pita bread just before serving to keep it warm and slightly crisp.
