Ingredients

Roasted Garlic & Shallot Base

  • 1-2 heads garlic
  • 1-2 shallots
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh thyme leaves
  • Kosher salt and black pepper, to taste

Tomatoes and Seasoning

  • 2 cups cherry tomatoes
  • Olive oil (for tossing tomatoes)
  • Salt, black pepper, and chili flakes (to taste)

Cheese Dip

  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese
  • 2 cups shredded low moisture mozzarella cheese, divided

Instructions

  1. Preheat Oven: Preheat the oven to 400° F to prepare for roasting the garlic, shallots, and tomatoes.
  2. Roast Garlic and Shallots: Place the garlic heads and shallots in a small baking dish (8x8 inch or smaller). Drizzle with 3 tablespoons of olive oil and add the fresh thyme leaves. Season lightly with kosher salt and black pepper. Roast for 40 minutes until the garlic and shallots turn deeply golden and very soft. Remove from oven and let them cool.
  3. Roast Tomatoes: Add 1 1/2 cups of the cherry tomatoes to the same baking dish. Toss with a drizzle of olive oil, salt, pepper, and chili flakes to taste. Bake for 10 minutes until softened and fragrant.
  4. Prepare Garlic-Shallot Paste & Cheese Mixture: Squeeze the roasted garlic cloves and shallots onto a cutting board, then mash or finely chop to form a paste. In a mixing bowl, combine the softened cream cheese, mayonnaise, roasted garlic and shallot paste, and chopped fresh basil. Season with freshly ground black pepper. Mix in the grated parmesan cheese and 1 cup of shredded mozzarella cheese until well combined.
  5. Combine Dip with Tomatoes: Remove the tomatoes from the oven. Mix the prepared cheese dip gently into the roasted tomatoes in the baking dish. Evenly top the mixture with the remaining 1 cup of shredded mozzarella cheese.
  6. Bake the Dip: Return the baking dish to the oven and bake for 15 minutes, or until the cheese is melted and the sauce is bubbling hot.
  7. Serve: Slice the remaining 1/2 cup cherry tomatoes and use them as a fresh topping along with additional fresh basil and thyme leaves. Optionally sprinkle chili flakes for extra heat. Serve the warm dip with fresh bread and/or crackers for dipping.
