Ingredients
Potatoes
- 3 pounds rinsed and quartered red potatoes
Seasonings and Toppings
- ¼ cup olive oil
- 8 finely minced cloves of garlic
- 1 cup grated parmesan cheese (divided: ¾ cup plus ¼ cup for topping)
- 2 tablespoons unsalted butter
- 3 tablespoons chopped fresh parsley
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) to get ready for roasting the potatoes to a perfect golden brown.
- Prepare Potatoes: Wash and quarter the red potatoes into evenly sized pieces to ensure uniform cooking and crispiness.
- Toss Ingredients: In a large bowl, combine the quartered potatoes with olive oil, minced garlic, ¾ cup of grated parmesan cheese, salt, and black pepper. Stir well with a spoon or rubber spatula to thoroughly coat all the potatoes.
- Arrange for Roasting: Spread the coated potatoes out in a single layer on a baking sheet, placing them cut side down to maximize browning. Evenly sprinkle the remaining ¼ cup parmesan cheese on top.
- Roast Potatoes: Bake in the preheated oven for 25 to 30 minutes until the potatoes are tender and have a golden-brown crust.
- Finish and Garnish: Remove from the oven and toss the hot potatoes with melted unsalted butter and chopped fresh parsley to add a rich flavor and fresh aroma before serving.
Notes
- Make-Ahead: Best enjoyed within an hour of preparation to maintain optimal texture and flavor.
- Storage: Store covered in the refrigerator for up to 3 days. Not recommended for freezing due to texture changes.
- Reheating: Reheat by placing the potatoes on a pan or metal tray and baking at 350°F (177°C) for 8 to 10 minutes until warm and crispy again.
- Variations: Finish with additional fresh herbs like rosemary or thyme for extra aromatics.
- Substitutions: Small Yukon gold or russet potatoes can be used instead of red potatoes.
- Cheese Alternatives: Pecorino Romano cheese makes a great substitute for parmesan for a slightly different flavor.
- Flavor Boost: Toss the potatoes with 1 tablespoon of Italian seasoning for additional herbs and spices.
