Strawberries
- 8 oz. strawberries, quartered, plus extra for garnish
- 2 Tbsp. maple syrup
- 1 Tbsp. olive oil
- Kosher salt, to taste
Cheese
- 1 13 ounce Brie cheese round

- Crackers or bread, toasted
Instructions
- Preheat the Oven. Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the strawberries and Brie.
- Roast the Strawberries. In a bowl, toss the quartered strawberries with maple syrup, olive oil, and a pinch of kosher salt to season evenly. Spread the strawberries on a parchment-lined baking sheet and roast in the oven at 400 degrees for 20 minutes, until they are juicy and softened.
- Prepare and Bake Brie. Remove the Brie cheese from its wrapper and place it in a small round baker or on a parchment-lined baking sheet. Bake the Brie in the oven at 400 degrees for 20 minutes, or until the cheese crust browns and the interior becomes soft and melty.
- Slice and Assemble. Allow the Brie to cool for 3 minutes after baking. Using a knife, carefully slice off the top rind of the Brie, removing about 1/2 inch of the cheese underneath. Spoon the warm roasted strawberries along with their juices over the exposed Brie surface, then place the rind lid back on top to cover.
- Serve. Serve the roasted strawberry Brie immediately with toasted bread or crackers for dipping and spreading.

- For extra flavor, consider adding fresh herbs like thyme or basil to the strawberries before roasting.
- If you prefer a less sweet dish, reduce the maple syrup or omit it entirely.
- Allow the Brie to cool slightly before slicing to avoid melting cheese spillage.
