Instructions
- Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C) and prepare a 9x13-inch casserole dish by spraying it with nonstick cooking spray to prevent sticking.
- Season Chicken: Sprinkle the taco seasoning evenly over both sides of the chicken breasts, then arrange them in the prepared casserole dish.
- Add Salsa: Pour the 1 1/2 cups of salsa evenly over the seasoned chicken breasts, ensuring they are well coated.
- Bake Covered: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 30 to 35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Add Cheese: Remove the dish from the oven, uncover, and evenly sprinkle the shredded Colby Jack cheese over the chicken breasts.
- Melt Cheese: Return the dish to the oven and bake uncovered for another 4 to 5 minutes, or until the cheese is melted and bubbly.
- Serve: Remove the baked salsa chicken from the oven and serve warm. Optionally, garnish with freshly chopped cilantro to add a fresh, herbal note.
