Cookie Dough
- ¾ cup butter, melted
- ¾ cup brown sugar, packed
- ½ cup granulated sugar
- 2 eggs (use yolks only, discard whites from 1 egg)

- 1 ½ teaspoons cornstarch
- ½ teaspoon salt

Caramel Layer
- ¾ to 1 cup caramel sauce
- ¾ to 1 teaspoon kosher salt, plus extra for topping (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 325°F (163°C). Lightly spray an 8x8-inch baking pan with a non-stick cooking spray and set it aside to ensure the bars don't stick.
- Mix Wet Ingredients: In a large bowl, combine the melted butter with the brown sugar and granulated sugar. Stir until well blended. Add the egg yolks (using two yolks, discarding one white) and vanilla extract to the mixture, stirring to combine thoroughly.
- Add Dry Ingredients: Gradually add the all-purpose flour, baking soda, cornstarch, and salt into the wet mixture. Stir until all dry ingredients are just incorporated, being careful not to overmix.
- Incorporate Chocolate Chips: Fold in the chocolate chips into the dough. Because the butter is melted, the mixture can be sticky and chocolate chips may be hard to stir in; use your hands patiently if needed to evenly distribute them.
- Layer Dough and Caramel: Spread approximately two-thirds of the cookie dough evenly into the prepared 8x8 pan, pressing it gently to form a uniform base. Pour the caramel sauce evenly over this cookie dough layer, then sprinkle with kosher salt.
- Top with Remaining Dough: Carefully crumble or piece the remaining one-third of the cookie dough over the caramel layer, gently pressing it to create an even top layer without mixing into the caramel.
- Bake: Place the pan in the oven and bake for 25 to 30 minutes, or until the cookie bars turn golden brown around the edges.
- Cool and Serve: Remove the bars from the oven and allow them to cool in the pan for at least 20 minutes before slicing. Optionally, sprinkle additional kosher salt on top before serving for an extra salty contrast.
- Storage: Store leftover bars in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months for longer preservation.
Notes
- Use only the egg yolks as indicated; discarding extra egg whites helps achieve the desired texture.
- If mixing chocolate chips is difficult due to the melted butter, don’t hesitate to use your hands to distribute them evenly.
- The amount of caramel sauce can be adjusted to your preference for a more or less gooey bar.
- Sprinkling kosher salt on top before serving enhances the salted caramel flavor but is optional.
- Cooling the bars fully before cutting is essential to allow the caramel layer to set properly.
