A quick and flavorful Sardine Ramen recipe that combines the rich umami of canned sardines with aromatic garlic and ginger, complemented by a creamy, tangy sauce and perfectly cooked jammy eggs. Ready in just 20 minutes, this comforting dish uses instant ramen noodles for an easy yet satisfying meal.

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

Sauce and Toppings

  • 120 g canned sardines (in olive oil)
  • 4 garlic cloves (finely chopped)
  • 15 g ginger (finely chopped)
  • 2 tbsp light soy sauce
  • 1/2 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1/2 tsp sugar
  • 2 tbsp mayonnaise
  • 2 tbsp yogurt (or cream)
  • 3 scallions (finely sliced)
  • Sesame seeds, to garnish
  • Chilli oil, to taste

Noodles and Eggs

  • 2 instant ramen noodle packets
  • 2 eggs

Instructions

  1. Heat sardine oil and sauté aromatics: Place a large skillet over medium heat and drizzle in the oil from the canned sardines. Add finely chopped ginger and garlic, frying for 2 minutes until fragrant and aromatic.
  2. Cook jammy eggs: Meanwhile, boil the eggs for 5 minutes 30 seconds (or 6 minutes if using large eggs). Once cooked, transfer them immediately into ice cold water to stop cooking and ease peeling.
  3. Create the sauce base: To the skillet with garlic and ginger, add light soy sauce, sesame oil, rice wine vinegar, mayonnaise, yogurt, sugar, and half of the sliced scallions. Stir thoroughly and reduce heat to low to keep warm.
  4. Prepare noodles: Cook the instant ramen noodles according to the packet instructions. When draining, save about 200 ml of the noodle cooking water in a jug for later use.
  5. Combine noodles and sauce: Transfer the drained noodles into the skillet with the sauce. Add 200 ml of the reserved noodle water and gently mix to coat the noodles evenly. The texture should be saucy but not soupy. Taste and adjust seasoning with salt and freshly ground black pepper as needed.
  6. Assemble and serve: Divide the noodles between two bowls. Top each bowl with canned sardines, a peeled jammy egg cut in half, the remaining scallions, sesame seeds, and drizzle with chilli oil to your desired heat level. Serve immediately and enjoy.

Notes

  • Jammy eggs are boiled to a slightly soft center; adjust boiling time slightly if you prefer firmer or runnier yolks.
  • You can substitute yogurt with cream for a richer sauce or mayonnaise with a dairy-free alternative for a lighter option.
  • Use the sardine oil for added flavor in place of any cooking oil.
  • Chilli oil can be adjusted or omitted depending on spice preference.
  • Be sure not to add too much noodle water to keep the sauce consistency perfect.
