Ingredients
Sauce
- 3 tablespoons soy sauce
- 2-3 tablespoons gochujang sauce
- 2 tablespoons tomato paste
- 2 tablespoons peanut butter
- 2 tablespoons water
- 1-2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 clove minced garlic
Main
- 1-2 cups broth or water (for thinning the sauce)
- 1 pound ground chicken (can substitute ground pork)
- 1/2 teaspoon salt
- Freshly ground black pepper (to taste)
- 2 packets ramen or stir fry noodles (just the noodles)
- 1-2 cups fresh spinach
Garnishes
- 1/4 cup fresh herbs (chives, scallions, cilantro, basil, or preferred herbs)
- Salt (to taste)
- 1 tablespoon chili oil (for finishing)
- 1 tablespoon sesame seeds (for finishing)
Instructions
- Prepare the sauce: In a small bowl, whisk together soy sauce, gochujang, tomato paste, peanut butter, water, brown sugar, sesame oil, and minced garlic until a thick, cohesive sauce forms. Alternatively, you can shake the ingredients together in a jar.
- Cook the chicken: Heat a large skillet over medium-high heat. Add the ground chicken and season generously with salt and freshly ground black pepper. Cook until fully browned and cooked through, breaking it apart as it cooks.
- Boil the noodles: Bring a pot of water to a boil and cook the ramen or stir fry noodles just a few minutes until softened. Drain and set aside.
- Combine and heat: To the cooked chicken in the skillet, add fresh spinach, the drained noodles, and the prepared sauce. Toss everything together over medium-high heat until the spinach wilts and everything is heated through. Gradually add broth or water, about 1 to 1 1/2 cups total, to thin the sauce and achieve your desired sauciness.
- Serve and garnish: Plate the noodles and top generously with fresh herbs, scallions, chili oil, and sesame seeds. Adjust salt if needed and serve immediately for a flavorful, spicy meal.
Notes
- You can substitute ground pork for the chicken if preferred.
- Adjust the gochujang quantity to control the spiciness of the dish.
- Use broth instead of water for a richer flavor when thinning the sauce.
- Fresh herbs like cilantro, basil, or scallions add brightness to balance the rich sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
