Ingredients

Vegetable Toppings

  • 1 red bell pepper, sliced
  • 8 ounces cremini mushrooms, sliced
  • 1 cup arugula

  • 2 spicy Italian sausage links, casings removed

Pizza Base & Sauce

  • 12 inch pizza dough
  • ½ cup marinara sauce

Cheese

  • 8 ounces buffalo mozzarella, torn into pieces

Cooking Oils & Seasonings

  • 2 tbsp olive oil (for sautéing vegetables and sausage)
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 500°F (260°C). If you have a pizza stone, preheat it for 1 hour to ensure it's extremely hot. Alternatively, place an upside-down baking sheet on the top rack and preheat for 10 minutes to mimic the heat retention of a stone.
  2. Prepare Peppers: Heat 2 tablespoons of olive oil in a sauté pan over medium heat. Add the sliced red bell peppers and cook until softened, about 5 minutes. Stir in 1 tablespoon of balsamic vinegar and season with salt and pepper. Cook for an additional minute, then remove from heat and set aside.
  3. Cook Sausage: Wipe the skillet clean, then add the sausage meat, cooking over medium heat until browned, breaking it up into bite-sized pieces as it cooks. Once browned, drain any excess oil and set the sausage aside.
  4. Sauté Mushrooms: In the same skillet, add the sliced cremini mushrooms. Cook over medium heat until they are browned and caramelized, about 7 minutes. Season with salt and pepper, then remove from heat and set aside.
  5. Roll Out Dough and Assemble: Lightly dust your work surface with flour and stretch or roll out the pizza dough into a 12-inch circle. Spread the marinara sauce evenly over the dough. Top with cooked sausage, sautéed red bell peppers, mushrooms, and torn buffalo mozzarella pieces.
  6. Bake and Broil Pizza: Carefully transfer the assembled pizza to the preheated pizza stone or hot upside-down baking sheet. Turn off the oven and switch on the broiler to high. Broil the pizza for 2 minutes to get a nice browning on the cheese. Then turn off the broiler and turn the oven back on to 500°F. Continue baking for another 6 to 7 minutes until the crust is crisp and the cheese is fully melted and bubbly. Remove from oven.
  7. Prepare Arugula Topping and Serve: In a small bowl, toss the arugula with lemon juice, 1 tablespoon olive oil, salt, and pepper. Scatter the dressed arugula over the baked pizza and serve immediately for a fresh, peppery finish.
