These Savory Veggie Muffins are a nutritious and delicious way to enjoy a variety of fresh vegetables baked into tender, cheesy muffins. Perfect for breakfast, snacks, or a light lunch, they combine wholesome ingredients like carrots, zucchini, bell peppers, and broccoli with melted mozzarella and herby flavors. Optional creamy avocado lime frosting adds a fresh twist for extra indulgence.

  • Total Time: 45 minutes
  • Yield: 12 muffins

Ingredients

Base Ingredients

  • 1.5 cups white flour
  • 1 cup milk
  • 1/2 cup mozzarella cheese or your favorite cheese, grated if needed
  • 3 eggs
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp dried oregano or rosemary

Vegetables

  • 2 carrots (orange and/or purple), finely chopped or grated
  • 1 zucchini, finely chopped or grated
  • 1 bell pepper, finely chopped
  • 1/2 cup broccoli, finely chopped
  • 1/2 cup corn, removed from cob
  • 1/2 cup cauliflower (optional), finely chopped

Frosting (optional)

  • 1 large avocado
  • 2 Tbsp lime juice
  • Cracked red peppercorns to sprinkle (optional)

Instructions

  1. Prepare the Vegetables: Use a knife, cheese grater, or spiralizer to finely chop or grate the carrots, zucchini, bell pepper, broccoli, and cauliflower. Remove the corn kernels from the cob.
  2. Grate the Cheese: If your cheese is not pre-grated, grate the mozzarella or your preferred cheese.
  3. Preheat Oven and Prepare Pan: Preheat your oven to 325ºF (170ºC) fan-assisted. Lightly grease a 12-cup muffin pan or line it with muffin liners.
  4. Make the Batter: In a large bowl, combine the flour, baking powder, salt, and oregano. Stir to mix well. Add the milk and eggs, then whisk until you have a smooth, homogenous batter.
  5. Add Cheese and Vegetables: Fold the grated cheese and prepared vegetables into the batter, mixing thoroughly to ensure even distribution.
  6. Fill Muffin Pan: Divide the muffin batter evenly among the 12 muffin cups in the pan.
  7. Bake the Muffins: Bake in the preheated oven for 25-30 minutes. Check doneness by inserting a toothpick or sharp knife into the center of a muffin; it should come out clean.
  8. Cool and Serve: Transfer the muffins to a wire rack to cool slightly. Serve warm or at room temperature, plain, with butter, or topped with avocado frosting.
  9. Optional Avocado Frosting: Blend the avocado and lime juice until smooth and creamy. Pipe or spread this frosting on the cooled muffins and sprinkle with cracked red peppercorns for a subtle heat.

Notes

  • Feel free to swap or add other vegetables depending on what you have available.
  • The avocado frosting is optional but adds a creamy, tangy contrast to the savory muffins.
  • You can store these muffins in an airtight container in the refrigerator for up to 3 days or freeze them for longer storage.
  • For a gluten-free version, substitute the white flour with a gluten-free flour blend.
  • Make sure not to overbake to keep the muffins moist and tender.
