Eggs

  • 8 large eggs

Sausage Coating

  • 1 1/2 pounds ground sausage

  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg

Coating

  • 1 cup all-purpose flour
  • 1 cup plain breadcrumbs

Instructions

  1. Boil the eggs: Place the eggs in a pot of boiling water and cook until your desired doneness—hard, medium, or soft boiled. Once cooked, immediately transfer them to an ice water bath to cool. Once cooled, gently peel the shells under running lukewarm water and set the eggs aside.
  2. Prepare the sausage mixture: In a large mixing bowl, combine the ground sausage, chopped chives or parsley, English mustard, black pepper, and nutmeg. Use your fingers to mix everything thoroughly until well blended.
  3. Wrap the eggs: Divide the sausage mixture into equal portions (weighing if preferred). Lightly oil a piece of plastic wrap and spread each portion into a 5-6 inch diameter circle. Place a peeled egg in the center, then carefully wrap the sausage around the egg by bringing up the plastic wrap edges and molding the sausage to fully enclose it. Remove the plastic wrap once the sausage is snug around the egg.
  4. Bread the Scotch eggs: Season the flour, whisked eggs, and breadcrumbs each with a pinch of salt and pepper in separate bowls. Dredge each sausage-covered egg first in the flour, then dip in the beaten eggs, and finally coat with breadcrumbs. Place the breaded eggs on a plate and refrigerate while preparing the oil.
  5. Heat the oil: Pour vegetable or frying oil into a deep saucepan or deep fryer and heat to 350-360°F (175-182°C). Ensure the oil is deep enough to submerge the Scotch eggs fully.
  6. Fry the Scotch eggs: Carefully lower each egg into the hot oil using a spoon. If the oil does not cover the eggs entirely, turn them gently to brown evenly on all sides. Fry until golden brown and the internal temperature reaches 145°F (63°C), about 8-10 minutes.
