Sheet Pan Cabbage Burgers offer a creative, low-carb twist on the classic cheeseburger by using roasted cabbage slices as a base instead of buns. Topped with juicy ground beef patties, melted cheddar cheese, and optional Guinness caramelized onions, this recipe delivers a flavorful, easy-to-make meal perfect for any weeknight dinner or lunch.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 medium Head of green cabbage
  • 4 tbsp Olive oil, divided
  • Kosher salt and pepper to taste
  • 1.25 lbs Ground beef
  • 4 slices American cheddar cheese
  • Ketchup, for garnish
  • Pickles, for garnish

For the Guinness Caramelized Onions (optional)

  • 2 tbsp Unsalted butter
  • 1 large Yellow onion, thinly sliced

Instructions

  1. Prepare the oven and cabbage: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Slice about 1 inch off the top of the cabbage, then cut the cabbage into 4 to 5 half-inch thick steaks. Arrange these steaks on the lined baking sheet. Drizzle with 3 tablespoons of olive oil, and season with kosher salt and pepper. Roast the cabbage steaks for approximately 20 minutes until they start to soften and brown.
  2. Make the Guinness caramelized onions: While the cabbage roasts, melt 2 tablespoons of unsalted butter in a skillet over medium heat. Add the thinly sliced yellow onion along with a pinch of kosher salt and pepper. Cook the onions for about 10 minutes, stirring occasionally, until they begin to soften. Pour in 1/3 cup of Guinness, and continue cooking for another 10 minutes, until the onions are deeply caramelized and flavorful. Remove from heat and set aside.
  3. Form and cook the burger patties: In a large mixing bowl, combine the ground beef with kosher salt, pepper, and 1 tablespoon of olive oil. Mix gently to combine. Shape the mixture into burger patties that will fit nicely on top of the roasted cabbage steaks. Remove the cabbage from the oven and place a beef patty on each cabbage steak, gently pressing down to create a smashed burger effect. Return the sheet pan to the oven and cook the burgers for about 8 minutes.
  4. Add cheese and finish cooking: Remove the sheet pan from the oven and top each burger with a slice of American cheddar cheese. Return the pan to the oven for a few more minutes until the cheese melts perfectly over the patties.
  5. Serve the cabbage burgers: Transfer the cabbage burgers to a serving platter. Top each with a generous portion of the Guinness caramelized onions and garnish with ketchup and pickles to taste. Serve immediately and enjoy this delicious low-carb meal.

Notes

  • Substitute American cheddar cheese with your favorite melting cheese such as Swiss or Monterey Jack for a different flavor profile.
  • To make this recipe keto-friendly, ensure that ketchup used is sugar-free or use low-carb condiments.
  • Leftover cabbage steaks and patties can be refrigerated separately for up to 2 days and reheated gently in the oven.
  • For a spicier version, add chili powder or smoked paprika to the ground beef mixture.
