Ingredients
Main Ingredients
- 12 ounces dry gnocchi
- 2 turkey kielbasa sausages, cut into 1/4-inch rounds
- 1 pint grape tomatoes
- 2 teaspoons minced garlic
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon cracked black pepper
- ½ teaspoon dried herbs or 2 teaspoons fresh herbs (such as thyme, rosemary, or oregano)
- ¼ teaspoon crushed red pepper flakes
- 1-2 cups fresh greens (such as spinach, arugula, or kale)
Herb Dressing (optional)
- ¾ cup olive oil
- ¼ cup water
- 2 tablespoons fresh-squeezed lemon juice
- 1 teaspoon minced garlic or ½ teaspoon garlic powder
- 1 tablespoon fresh herbs (parsley, cilantro, dill, thyme, basil) or 1 teaspoon dried herb blend
- Generous salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the ingredients.
- Combine Ingredients: On a large, rimmed sheet pan, place the dry gnocchi, sliced turkey kielbasa sausage, grape tomatoes, minced garlic, olive oil, salt, cracked black pepper, crushed red pepper flakes, and your choice of dried or fresh herbs. Toss everything together to evenly coat the ingredients with oil and seasonings, then spread the mixture out in a single layer on the sheet pan for even cooking.
- Bake: Place the sheet pan in the preheated oven and bake for 20-25 minutes. Bake until the gnocchi is tender and the grape tomatoes have burst, releasing their juices and adding flavor to the dish.
- Prepare Herb Dressing (Optional): While the gnocchi and sausage bake, combine the dressing ingredients – olive oil, water, lemon juice, garlic, fresh or dried herbs, salt, and pepper – in a blender or food processor. Pulse for about 30 seconds until well combined and emulsified.
- Finish and Serve: Remove the sheet pan from the oven. Toss the fresh greens into the roasted gnocchi and sausage mixture to slightly wilt the greens with the residual heat. Drizzle the prepared herb dressing over the top and serve immediately for a fresh, flavorful meal.
Notes
- Use fresh herbs for brighter flavor, or dried if fresh is not available; adjust quantities accordingly.
- Fresh greens can include spinach, arugula, or kale depending on your preference.
- The herb dressing is optional but adds a bright, fresh contrast to the roasted ingredients.
- Adjust crushed red pepper flakes to control the spiciness of the dish.
- This recipe is easy to customize by swapping turkey kielbasa for other sausages or adding additional vegetables.
