Ingredients
Vegetables
- 1 medium green pepper, thinly sliced
- 1 medium sweet red pepper, thinly sliced
- 1 medium sweet yellow pepper, thinly sliced
- 1 medium onion, thinly sliced
Other Ingredients
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper
- 1 package (16 ounces) potato gnocchi
- 1 pound hot or sweet Italian sausage links, casings removed
- 1/4 cup grated Parmesan cheese, plus more for serving
- Fresh lemon juice, for serving (optional)
- Chopped fresh parsley or basil, for serving (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for roasting all ingredients evenly.
- Prepare Ingredients on Pan: Grease a 15x10x1-inch baking pan. In the pan, toss together the thinly sliced green, red, and yellow peppers, onion, potato gnocchi, olive oil, dried oregano, kosher salt, and black pepper until everything is evenly coated and mixed. Spread the mixture out in an even layer on the pan.
- Add Sausage: Arrange the Italian sausage links, with casings removed, in dollops spaced evenly around the pan over the vegetables and gnocchi.
- First Bake: Bake the pan in the preheated oven for 15 minutes to start cooking the sausage and softening the vegetables and gnocchi.
- Stir and Continue Baking: Remove the pan from the oven and stir the ingredients gently to redistribute. Return it to the oven and bake another 10 to 15 minutes, or until the sausage is completely cooked through and the vegetables are tender.
- Finish with Cheese: Remove the pan from the oven and stir in 1/4 cup grated Parmesan cheese to melt and blend flavors.
- Serve: Serve warm, optionally garnished with a squeeze of fresh lemon juice, chopped fresh parsley or basil, and additional Parmesan cheese for extra flavor.
Notes
- For milder flavor, choose sweet Italian sausage; for a spicy kick, use hot Italian sausage.
- Ensure sausages are fully cooked by checking internal temperature reaches 160°F (71°C).
- Gnocchi can be replaced with gluten-free varieties if desired.
- Adding fresh lemon juice brightens the dish and complements the rich flavors.
- You can add other vegetables like zucchini or mushrooms for variation.
