Crispy and cheesy shredded chicken nachos baked to perfection with fire roasted salsa, topped with jalapeños, cilantro, guacamole, sour cream, and fresh lime wedges for a flavorful and crowd-pleasing appetizer or snack.

  • Total Time: 23 minutes
  • Yield: 4 servings

Ingredients

Nachos

  • 8 ounces shredded chicken (homemade or rotisserie)
  • 1/2 cup fire roasted salsa (homemade or store-bought)
  • 8 ounces thick, sturdy tortilla chips
  • 8 ounces shredded Monterey Jack cheese (or mix of Jack and cheddar)

Toppings

  • Thinly sliced jalapeño, fresh or pickled, to taste
  • Chopped fresh cilantro, to taste
  • Pico de Gallo, to taste
  • Guacamole, to taste
  • Sour cream, to taste
  • Lime wedges, for serving (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375˚F to prepare for baking the nachos.
  2. Mix Chicken and Salsa: In a medium bowl, combine the shredded chicken and fire roasted salsa. Toss well to evenly coat the chicken with the salsa's flavor.
  3. Prepare Chips: Spread the tortilla chips in a single layer on a quarter sheet pan. Chips can overlap but should not be stacked to ensure even crisping.
  4. Crisp Chips: Bake the chips in the preheated oven for 3 minutes until they are lightly crisp. This step prevents soggy nachos after toppings are added.
  5. Layer Nachos: Remove the chips from the oven and evenly layer half of the shredded cheese over them. Next, spread the chicken and salsa mixture on top, then finish with the remaining shredded cheese.
  6. Bake Melt and Heat: Return the pan to the oven and bake for 7-10 minutes until the cheese has melted thoroughly and the chicken is heated through.
  7. Serve: Serve the nachos hot topped with sliced jalapeños, chopped cilantro, and lime wedges. Offer Pico de Gallo, guacamole, and sour cream on the side for added flavor and creaminess.

Notes

  • Use thick, sturdy tortilla chips to prevent sogginess when baking with toppings.
  • Adjust the jalapeño quantity based on your preferred spice level.
  • For added flavor, try using a mix of Monterey Jack and sharp cheddar cheeses.
  • Leftover nachos can be reheated briefly in the oven to restore crispness.
  • To make this recipe quicker, use pre-cooked shredded chicken such as from a rotisserie chicken.
