Instructions
- Boil Liquids and Cook Grits: In a medium saucepan over medium-high heat, bring 2 cups of milk and 3/4 cup chicken broth to a boil. Gradually add 1 cup quick-cooking grits and 1/4 teaspoon salt while stirring constantly with a whisk to avoid lumps. Continue cooking, stirring constantly, until the mixture thickens, about 5 minutes.
- Incorporate Cheese and Butter: Remove the grits from heat. Stir in 1/2 cup shredded Parmesan cheese, 2 tablespoons butter, and 4 ounces cream cheese until all the cheese and butter have melted and the mixture is creamy.
- Add Remaining Ingredients: Mix in 2 tablespoons chopped fresh chives, 3 tablespoons chopped fresh parsley, 1 tablespoon lemon juice, 1 lightly beaten egg, and 1 pound roughly chopped raw shrimp. Stir well to combine all components evenly.
- Prepare Baking Dish: Generously coat an 11x7-inch baking dish with cooking spray to prevent sticking. Transfer the shrimp and grits mixture into the prepared dish, spreading it evenly.
- Bake: Place the casserole in a preheated oven at 375°F (190°C). Bake for 25 minutes or until the casserole is set and the top begins to develop golden brown spots, indicating it’s cooked through and slightly crisped on top.
Notes
- Using whole milk creates a richer dish but lighter milk varieties work as well.
- Quick-cooking grits help reduce cooking time without sacrificing texture.
- Fresh herbs add brightness; dried can be substituted but use less.
- Make sure not to overcook the shrimp inside to keep them tender.
- Allow the casserole to rest 5 minutes after baking for better slicing and serving.
