Ingredients
For the Shrimp:
- 1 ½ pounds peeled cooked shrimp (deveined and tails removed)
- 1 Tbsp coconut sugar
- 2 teaspoons lime zest
- ½ teaspoon chipotle powder
- ½ teaspoon paprika
- ¼ teaspoon cumin
- Salt and pepper, to taste
- 1 tablespoon olive oil
For the Bowls:
- 4 cups cilantro lime coconut rice (or white Jasmine rice)
- 4 cups shredded romaine lettuce
- 1 cup corn (fresh or frozen, thawed)
- 1 cup black beans (rinsed and drained)
- 2 large avocados (sliced)
- 2 cups pico de gallo
- 4-6 sliced radishes
- Fresh cilantro, for garnish
- 2 limes (quartered)
For the Sriracha Sauce:
- 1 cup mayonnaise
- 6 Tbsp Sriracha sauce
- 3 tsp lime juice or vinegar
- 3 tsp honey
Instructions
- Prep the shrimp: In a small bowl, mix together coconut sugar, lime zest, chipotle powder, paprika, cumin, salt, and pepper until well combined. Pat the cooked shrimp dry with a paper towel, then place them in a large mixing bowl. Sprinkle the seasoning blend over the shrimp and toss gently until all shrimp are evenly coated.
- Make the Sriracha sauce: In a separate small bowl, whisk together mayonnaise, Sriracha sauce, lime juice (or vinegar), and honey until smooth and well incorporated. Set aside.
- Assemble the bowls: In each serving bowl, layer a base of cilantro lime coconut rice followed by shredded romaine lettuce. Add corn, black beans, the seasoned shrimp, sliced avocado, pico de gallo, and 3-4 thin radish slices. Garnish with fresh cilantro and a wedge of lime. Drizzle or add spoonfuls of the prepared Sriracha sauce on top. Serve immediately and enjoy!
Notes
- This recipe uses cooked shrimp to save time; you can substitute raw shrimp but will need to cook them before seasoning.
- For the cilantro lime coconut rice, cook jasmine rice in coconut milk and stir in lime juice and chopped cilantro for best flavor.
- Adjust the amount of chipotle powder and Sriracha sauce to control the spice level according to your preference.
- Fresh corn is preferred but frozen corn works well; thaw before adding to the bowls.
- Leftover components store well separately in the refrigerator for up to 2 days.
