Ingredients
For the Shrimp Marinade and Cooking
- 3 tablespoons taco seasoning (store-bought or homemade)
- 4 tablespoons extra-virgin olive oil, divided
- 2 tablespoons fresh lime juice (from 1 lime)
- 2 pounds jumbo, tail-on raw shrimp, peeled and deveined
For the Vegetables
- 2 bell peppers, cut into ½-inch-thick strips
- 1 red onion, cut into ½-inch-thick slices
To Serve
- 12 (6-inch) flour tortillas, warmed
- Sliced avocado, for serving
- Fresh cilantro, for serving
Instructions
- Marinate the Shrimp: In a large bowl, combine the taco seasoning, lime juice, and 3 tablespoons of the olive oil. Add the shrimp and toss well to coat evenly with the marinade.
- Sauté the Vegetables: Heat the remaining 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat. Once the oil is shimmering, add the bell peppers and red onions. Cook, stirring occasionally, until the edges of the veggies begin to char slightly and soften, about 5 to 6 minutes. Remove the vegetables from the skillet and transfer them to a plate.
- Cook the Shrimp: Add the marinated shrimp to the same skillet in a single layer. Let cook untouched for about 2 minutes to develop a good sear. Flip the shrimp and cook for an additional 1 minute or until the shrimp are pink, opaque, and cooked through.
- Combine and Heat Through: Return the cooked peppers and onions to the skillet. Stir everything together to combine and warm through for about 1 minute.
- Serve the Fajitas: Transfer the shrimp and vegetable mixture to a serving dish. Serve alongside warmed flour tortillas, sliced avocado, and fresh cilantro. Let everyone assemble their own fajitas at the table.
Notes
- To make homemade taco seasoning, combine chili powder, paprika, cumin, garlic powder, onion powder, oregano, salt, and pepper to taste.
- For a gluten-free version, substitute corn tortillas for flour tortillas.
- Feel free to use other types of bell peppers such as green, yellow, or orange for varied color and flavor.
- Make sure not to overcook shrimp to keep them tender and juicy; they cook quickly and become rubbery if left too long.
- Warm tortillas wrapped in foil or steamed for best texture and pliability.
