Ingredients
Chicken
- 2 bone-in, skin-on chicken breasts, cut in half cross-wise to make 4 pieces
- 6 chicken legs
- 4 chicken thighs
Marinade
- 1/2 cup extra virgin olive oil
- Juice of 1 lemon
- 1 clove garlic, minced or grated
- 2 tablespoons Lebanese 7 Spice
- 1 teaspoon kosher salt
Instructions
- Preheat the oven: Heat the oven to 425°F (220°C) to prepare for roasting the chicken.
- Combine chicken pieces: Place all chicken pieces (breasts, legs, and thighs) in a large bowl or gallon-sized zip-top bag.
- Make the marinade: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, Lebanese 7 Spice, and kosher salt until fully combined.
- Marinate chicken: Pour the marinade over the chicken pieces, turning them to ensure an even coat. Cover and refrigerate for at least one hour up to 12 hours to allow flavors to penetrate.
- Prepare baking sheet: Line a sheet pan with non-stick foil to make cleanup easier and prevent sticking.
- Arrange chicken on pan: Transfer the marinated chicken pieces to the prepared pan, leaving excess marinade behind to avoid excess liquid pooling in the pan.
- Roast the chicken: Roast in the preheated oven for 45 minutes to 1 hour, checking that the internal temperature reaches 165°F (74°C) for safe consumption. For more even browning, activate the oven convection setting during the last 20 minutes if available.
- Serve or store: Serve the chicken immediately while hot, or allow it to cool and refrigerate for later. To reheat, warm at 250°F (120°C) for 20 minutes until heated through.

- Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for food safety.
- Marinating longer than 1 hour intensifies the flavor, but do not exceed 12 hours to prevent texture changes.
- Convection setting is optional but aids in achieving evenly browned, crispy skin.
- Leftover chicken can be refrigerated for up to 3 days.
- If you can’t find Lebanese 7 Spice, a mix of allspice, cinnamon, cloves, black pepper, nutmeg, coriander, and cumin can be substituted.
