Chicken Marinade
- 2 lbs boneless skinless chicken breasts, cubed
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice

Toppings
- 1 cup English cucumber, diced

- 3/4 cup feta crumbles
- 3/4 cup tzatziki sauce (recommended: Cedar's brand)
- 1/2 cup red onion, diced
- 1/2 cup Kalamata olives
Instructions
- Marinate the Chicken: In a large bowl, combine the cubed chicken breasts with Greek yogurt, lemon juice, olive oil, red wine vinegar, dried oregano, minced garlic, kosher salt, and ground pepper. Stir well to ensure all pieces are coated evenly with the marinade.
- Chill the Chicken: Cover the bowl and place it in the refrigerator for at least 30 minutes, or up to 24 hours, to allow the flavors to meld. Remove from the fridge about 10 minutes prior to cooking to take the chill off.
- Cook the Chicken: Heat approximately 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer.
- Sauté until Done: Cook the chicken for 3 to 4 minutes on each side, or until the pieces are no longer pink in the center and the edges are nicely browned and caramelized.
- Prepare Toppings: While chicken cooks or ahead of time, dice the cucumbers, tomatoes, red onion, and measure out feta crumbles, Kalamata olives, and tzatziki sauce for serving.
- Serve: Plate the cooked chicken and top with the prepared cucumber, tomatoes, red onion, feta, olives, and dollops of tzatziki sauce. Serve warm or cold according to preference. For meal prep, keep toppings separate from chicken until ready to serve.
