- 2 tsp olive oil
- 800g waxy potatoes, chopped into 1 cm cubes
- 500g beef sausages (casings removed if present)
- 1 red capsicum, chopped
- 1 red onion, sliced
Seasonings

- ½ tsp salt
- ¼ tsp white pepper

- 4 eggs
- 4 Tbsp tomato relish
- 1 spring onion, finely sliced
- Italian parsley, chopped
Instructions
- Heat the oil: Add 2 teaspoons of olive oil to a large frying pan and warm it over medium heat to prepare for cooking the potatoes.
- Cook the potatoes: Add the chopped 1 cm cubed waxy potatoes to the pan, stir well to coat them in the oil, then pour in one cup of water to help cook the potatoes through. Stir occasionally as the water simmers.
- Evaporate the water and brown potatoes: Continue cooking and stirring for about 10 minutes until the water has completely evaporated and the potatoes have started to brown on the edges.
- Add the sausages: Break the beef sausages into small pieces (removing casings if needed), then add them to the pan with the potatoes. Fry both together until the sausage pieces start to brown on the edges.
- Add vegetables: Mix in the chopped red capsicum and sliced red onion, cooking for another 10 minutes or until the potatoes and sausages are fully cooked and tender.
- Season the mix: Sprinkle over the garlic powder, smoked paprika, white pepper, and salt evenly. Stir thoroughly to coat all ingredients with the seasonings.
- Fry the eggs: In a separate frying pan, fry the 4 eggs until the outsides are crispy but the yolks remain cooked to your liking. Carefully place the eggs on top of the sausage and potato mixture.
- Finish and serve: Add dollops of tomato relish on top, then sprinkle the finely sliced spring onion and chopped Italian parsley over everything. Serve immediately while hot.

- Use waxy potatoes like red or new potatoes to ensure they hold their shape when cooked.
- If your sausages have casings, remove them before cooking by squeezing out the filling.
