- 4 tbsp unsalted butter, melted
- 6 cloves garlic, minced
- 1 tsp dried thyme or 1 tbsp fresh thyme
- 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
- 1/2 cup beef broth
- 1 tbsp Worcestershire sauce
Garnish (optional)
- 2 tbsp fresh parsley, chopped
- Grated Parmesan cheese
Instructions
- Prepare the beef: Pat beef bites dry with paper towels. Season evenly with salt, black pepper, garlic powder, and smoked paprika to ensure the flavors penetrate the meat.
- Sear the beef (optional): Heat olive oil in a skillet over medium-high heat. Sear the beef cubes in batches for 1-2 minutes on each side until browned. This step adds an extra depth of flavor but can be skipped to save time.
- Toss the potatoes: In a large bowl, combine baby potatoes with olive oil, salt, and black pepper. Toss well to coat all pieces evenly for even cooking and seasoning.
- Make the garlic butter sauce: In a small bowl, whisk together melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce. This aromatic sauce will infuse the beef and potatoes with rich flavor during cooking.
- Layer the slow cooker: Place the seasoned potatoes evenly at the bottom of the slow cooker. Layer the seared (or raw) beef bites on top of the potatoes.
- Add the sauce: Pour the garlic butter sauce evenly over the layers in the slow cooker, ensuring everything is well coated for maximum flavor.
- Slow cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the beef is tender and the potatoes are fork-tender.
- Garnish and serve: Before serving, sprinkle fresh chopped parsley and grated Parmesan cheese over the dish if desired. Serve warm alongside crusty bread or a fresh green salad for a complete meal.

- No slow cooker? Use an Instant Pot’s slow cooker function for similar results.
- Add vegetables like carrots, mushrooms, or green beans during the last 1-2 hours of cooking for added nutrition and flavor.
