  • 16 ounces dried green split peas, rinsed well and drained
  • 2 carrots, diced (about 1 cup)
  • 2 ribs celery, diced (about 1 cup)
  • ½ cup diced white or yellow onion
  • 1 tablespoon minced garlic
  • ⅓ cup chopped fresh Italian parsley
  • 1 tablespoon fresh thyme leaves
  • 1 dried bay leaf
  • 1 teaspoon salt (plus additional as needed)
  • Freshly ground black pepper, to taste
  • 1 meaty ham bone (see notes)
  • 6 cups low sodium chicken broth (or more as needed, divided)

Instructions

  1. Prepare Ingredients: Rinse and drain the dried green split peas. Dice the carrots, celery, and onion, and mince the garlic. Chop fresh Italian parsley and gather fresh thyme leaves.
  2. Load Slow Cooker: In the slow cooker, layer the rinsed split peas, diced carrots, celery, onion, minced garlic, chopped parsley, fresh thyme leaves, dried bay leaf, salt, pepper, and finally place the meaty ham bone on top. Add 4 to 5 cups of chicken broth just to cover the ingredients, reserving the rest for later.
  3. Cook on Low: Cover the slow cooker and cook on LOW for 6 to 8 hours. Stir occasionally during cooking and add additional chicken broth if the liquid level drops below the ingredients to keep them covered.
  4. Finish Soup: When peas are tender, remove the ham bone and place it on a cutting board. Pull off any remaining ham from the bone, tear into small pieces, and return the meat to the slow cooker. Discard the ham bone and bay leaf. Lightly mash some peas against the side of the slow cooker and stir until creamy. Add broth as needed to reach desired consistency. Taste and adjust seasoning with additional salt and freshly ground black pepper as needed.

Notes

  • The ham bone adds rich smoky flavor but can be substituted with smoked ham hock or omitted for a vegetarian version (then use vegetable broth).
  • Stirring occasionally during slow cooking prevents sticking and helps break down peas evenly.
  • Adjust the consistency by adding reserved broth if the soup becomes too thick after cooking.
