Slow Cooker Teriyaki Chicken features tender chicken breasts cooked slowly with garlic, ginger, soy sauce, and honey, then shredded and coated in a rich teriyaki sauce. This easy crock pot recipe delivers bold Asian flavors and is perfect served over rice for a comforting and satisfying meal.

  • Total Time: 4 hours 10 minutes
  • Yield: 6 servings

Ingredients

Chicken

  • 1 1/2 pounds boneless skinless chicken breasts

Teriyaki Sauce

  • 2 teaspoons garlic, minced
  • 2 teaspoons ginger, minced
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 1/2 cup low sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons rice vinegar

Thickening and Garnish

  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame seeds
  • 2 tablespoons sliced green onions

Instructions

  1. Prepare Chicken: Place the boneless skinless chicken breasts into the slow cooker pot evenly.
  2. Make Teriyaki Sauce: In a small bowl, whisk together the minced garlic, minced ginger, honey, brown sugar, low sodium soy sauce, toasted sesame oil, and rice vinegar until fully combined.
  3. Cook Chicken: Pour the teriyaki sauce mixture over the chicken breasts in the slow cooker. Cover the slow cooker and cook on HIGH for 3 hours or on LOW for 5-6 hours until the chicken is cooked through and tender.
  4. Shred Chicken: Remove the cooked chicken breasts from the slow cooker and use two forks to shred the meat finely.
  5. Strain Sauce: Pour the cooking liquid from the slow cooker through a strainer into a medium saucepan, discarding any solids left behind.
  6. Thicken Sauce: Place the saucepan over medium-high heat and bring the strained sauce to a simmer. In a small bowl, dissolve the cornstarch in cold water, then slowly whisk this mixture into the simmering sauce. Continue cooking and stirring for 1-2 minutes until the sauce thickens.
  7. Combine and Serve: Pour the thickened teriyaki sauce over the shredded chicken and toss until the chicken is well coated. Sprinkle sesame seeds and sliced green onions on top for garnish. Serve immediately over cooked rice or your preferred side.

Notes

  • Use low sodium soy sauce to control the saltiness of the dish.
  • If you prefer a thicker sauce, adjust the amount of cornstarch accordingly.
  • For extra flavor, marinate the chicken in the sauce mixture for 1 hour before slow cooking if time allows.
  • Serve with steamed vegetables or over noodles for a complete meal.
  • Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
