Ingredients
Dough Balls:
- 500 g (4 cup + 1 tbsp) strong white bread flour
- 2 tsp salt
- 25 g (3 tbsp) caster sugar
- 10 g (3 tsp) instant yeast
- 30 g (2 tbsp) unsalted butter softened
- 330 ml (1 1/2 cups) warm (but not hot) milk
- 1 tbsp oil
Also:
- 1 tbsp unsalted butter melted
Instructions
- Mix Dry Ingredients: Place the flour in a food mixer bowl fitted with a dough hook. Add the salt and sugar on one side of the bowl and the instant yeast on the opposite side to prevent direct contact between salt and yeast.
- Add Butter and Milk: Add the softened butter and warm milk to the bowl. Turn the mixer on medium speed to combine the ingredients, then let it knead the dough for 7-8 minutes until it becomes soft and smooth, though initially sticky.
- First Prove: Lightly oil the inside of a large bowl and transfer the dough into it. Cover with clingfilm and place in a warm area to prove for about 1 hour or until the dough doubles in size.
- Knock Back Dough: Turn the risen dough onto a lightly floured surface and gently fold it onto itself repeatedly to knock out the air.
- Shape Dough Balls: Divide the dough into approximately 30 equal pieces, each weighing around 30 grams. Roll each piece into a neat ball and arrange them spaced apart in a large ovenproof dish.
- Second Prove: Cover the dish with clingfilm and leave the dough balls to prove for another 30-40 minutes until puffed.
- Preheat Oven: Preheat the oven to 190°C (375°F) fan-assisted.
- Bake Dough Balls: Remove clingfilm and bake the dough balls in the oven for 20-25 minutes until they turn golden brown.
- Brush with Butter: Take the dough balls out of the oven and while still hot, brush them generously with melted unsalted butter.
- Cool and Serve: Allow the dough balls to cool for about 10 minutes before serving to enjoy their fluffy texture.
Notes
- Can I make dough balls ahead? These are best served fresh and warm straight from the oven, but they stay soft and fresh for 1-2 days if stored in an airtight container at room temperature.
