Bean Layer
- 1 (15-ounce) can black beans, drained, rinsed, and warmed with a bit of water
Shrimp Filling
- 1 pound medium shrimp, cleaned, deveined, and chopped
- 1 tablespoon olive oil
- 2 tablespoons chopped onion
- 2 cloves garlic, minced
- Kosher salt and ground black pepper, to taste
- 1 – 1 1/2 tablespoons chipotle sauce
- 1 tablespoon fresh key lime juice (from 1 key lime)
- 1 teaspoon Cholula Hot Sauce (or your favorite brand)
- 1/3 cup Monterey Jack cheese, grated
- 1 tablespoon sour cream
Assembly & Serving
- 4 (8-10 inch) flour tortillas, or 8 thin (5-6 inch) tortillas
- 1 avocado, for guacamole
- Additional lime wedges, for serving
Instructions
- Sauté onions and garlic: Heat olive oil in a large skillet over medium heat until shimmering. Add the chopped onions and sauté until they become soft and translucent, about 3-4 minutes. Add minced garlic and cook for approximately 30 seconds, being careful not to burn the garlic. Season with kosher salt and ground black pepper to taste.
- Cook shrimp: Add the chopped shrimp to the skillet. Squeeze fresh key lime juice over the shrimp and cook for 2-3 minutes, stirring occasionally, until shrimp turn pink and are just cooked through. Avoid overcooking to keep shrimp tender. Stir in the chipotle sauce and Cholula hot sauce until the shrimp is evenly coated. Remove skillet from heat.
- Add cheese and sour cream: Taste the shrimp mixture and adjust seasoning with salt and pepper if needed. Quickly fold in the sour cream and grated Monterey Jack cheese, stirring until the cheese melts and the mixture is creamy.
- Warm tortillas: Heat a griddle or large skillet over medium heat. Warm the flour tortillas one at a time on the griddle for about 20-30 seconds on each side until pliable and slightly toasted.
- Assemble burritos: Lay each warm tortilla flat. Spread a layer of warmed black beans evenly over each tortilla. Spoon the spicy shrimp mixture over the beans. Carefully roll each tortilla into a tight log, tucking in the edges as you roll to seal the burrito.
- Grill burritos: Place the rolled burritos seam side down on the heated griddle. Grill for 2-3 minutes on each side, or until the tortillas are golden brown and crisp.
- Serve: Serve the grilled spicy shrimp burritos immediately with fresh guacamole made from the avocado and lime wedges on the side.
