  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

For the Stir Fry:

  • 1 pound extra firm tofu, pressed & cubed
  • 2 tablespoons cornstarch
  • Salt & pepper, to taste
  • 3 tablespoons avocado oil, divided
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger
  • 2 cups sliced king oyster mushrooms
  • 4 baby bok choy, quartered
  • 3 cups cooked soba noodles
  • Scallions, to garnish
  • Sesame seeds, to garnish
  • Sliced red chilies, to garnish

For the Sauce:

  • 3 tablespoons tamari
  • 2 tablespoons pure maple syrup
  • 2 tablespoons water
  • 3 teaspoons spicy sesame oil
  • 1 teaspoon rice vinegar
  • 1 clove garlic, grated
  • 1 teaspoon ginger, grated
  • Salt & pepper, to taste
  • 1 teaspoon cornstarch

Instructions

  1. Prepare the tofu: In a medium mixing bowl, toss the pressed and cubed tofu with cornstarch, salt, and pepper until each piece is evenly coated. This helps create a crispy exterior when frying.
  2. Fry the tofu: Heat 2 tablespoons of avocado oil in a skillet over medium heat. Add the tofu and fry until golden brown on all sides, about 4 to 6 minutes. Remove the tofu from the pan and set it aside.
  3. Sauté aromatics and mushrooms: In the same skillet, add the remaining 1 tablespoon of oil along with minced garlic, minced ginger, and sliced king oyster mushrooms. Cook until the mushrooms begin to soften, approximately 5 minutes, stirring occasionally.
  4. Cook the bok choy: Add the quartered baby bok choy to the skillet and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
  5. Combine tofu, noodles, and sauce: Return the fried tofu to the skillet, then add the cooked soba noodles. Pour in the prepared sauce and toss everything together until the noodles and vegetables are evenly coated and heated through.
  6. Garnish and serve: Transfer the spicy soba noodles with crispy tofu and bok choy to a serving plate. Garnish generously with sliced scallions, sesame seeds, and sliced red chilies for an added kick and fresh texture.
  7. Prepare the sauce: In a small mixing bowl, whisk together tamari, pure maple syrup, water, spicy sesame oil, rice vinegar, grated garlic, grated ginger, salt, pepper, and cornstarch until smooth. Set aside until ready to use in the stir-fry.

Notes

  • Press tofu well to remove excess moisture for maximum crispiness.
  • Cook soba noodles according to package instructions before adding to the stir-fry.
  • Adjust the amount of spicy sesame oil and red chilies for desired heat level.
  • King oyster mushrooms add a meaty texture, but shiitake or cremini mushrooms are good substitutes.
  • Use gluten-free tamari if avoiding gluten.
  • For a nuttier flavor, lightly toast sesame seeds before garnishing.
