Instructions
- Preheat the Grill or Broiler: Prepare your grill or broiler for cooking by heating it to medium for grilling or positioning the rack about 4 inches from the broiler heat source. Make sure to grease the grill rack or broiler pan.
- Sauté Vegetables: In a large skillet, heat the olive oil over medium-high heat. Add the sliced mushrooms and green onions and sauté until they become tender and fragrant, about 4-5 minutes.
- Add Spinach and Pecans: Stir in the fresh baby spinach and chopped pecans, cooking just until the spinach wilts. Remove this mixture from heat and keep it warm while you cook the chicken.
- Season the Chicken: Sprinkle both sides of each chicken breast half evenly with the rotisserie chicken seasoning to add flavor.
- Cook the Chicken: Place the seasoned chicken breasts on the preheated grill rack or greased broiler pan. Grill covered over medium heat or broil about 4 inches from the heat source. Cook for 4-5 minutes per side until the internal temperature reaches 165°F.
- Add Cheese and Melt: Top each cooked chicken breast with halved slices of reduced-fat provolone cheese. Return to grill or broiler and cook until the cheese melts, about 1-2 minutes.
- Serve: Plate the chicken breasts and generously spoon the warm mushroom, spinach, and pecan mixture over the top. Serve immediately for best taste and texture.
