This Spinach Cobb Salad is a vibrant and nutritious dish combining fresh baby spinach with crunchy red cabbage, creamy avocado, and savory bacon. Tossed with a tangy homemade white-wine vinegar dressing, it’s perfect for a quick, healthy lunch or light dinner that comes together in just 15 minutes.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Dressing Ingredients

  • 3 Tbsp white-wine vinegar
  • 2 Tbsp finely minced shallot
  • 1 Tbsp Dijon mustard
  • 1 tsp freshly ground pepper
  • ¼ tsp salt
  • 3 Tbsp extra-virgin olive oil

Salad Ingredients

  • 10 cups baby spinach leaves
  • 2 eggs (hard cooked, peeled and chopped)
  • 1 cup red cabbage, finely chopped or shredded
  • ⅓ cup red onion, finely chopped
  • 1 avocado, diced
  • 4 slices cooked bacon, crumbled
  • 4 Delallo Pepperazzi (Spicy Sweet Red Peppers), left whole

Instructions

  1. Make the dressing: In a small bowl, whisk together white-wine vinegar, minced shallot, Dijon mustard, freshly ground pepper, and salt. Slowly drizzle in the extra-virgin olive oil while whisking continuously until the mixture is fully emulsified.
  2. Prepare the salad base: Place the baby spinach leaves in a large mixing bowl, creating a fresh green bed for the toppings.
  3. Add salad toppings: Layer the chopped hard-cooked eggs, finely chopped red cabbage, red onion, diced avocado, and crumbled cooked bacon on top of the spinach. Note: Save a small amount of eggs and bacon aside for garnish later.
  4. Toss the salad: Drizzle the prepared dressing over the salad mixture and toss gently to combine all ingredients thoroughly and evenly coat the leaves.
  5. Plate the salad: Divide the tossed salad evenly onto four individual plates.
  6. Garnish and serve: Top each salad plate with 1 or 2 whole Delallo Pepperazzi (Spicy Sweet Red Peppers) and sprinkle the reserved eggs and bacon over each serving for an inviting presentation. Serve immediately and enjoy your fresh Spinach Cobb Salad!

Notes

  • Hard cook eggs by boiling them for about 9-12 minutes for firm yolks.
  • Use freshly cracked pepper to maximize flavor in the dressing.
  • The spicy sweet peppers add a nice kick but can be omitted if you prefer a milder salad.
  • For a vegetarian version, omit bacon or substitute with smoked tempeh or a vegetarian bacon alternative.
  • This salad is best served fresh and should be eaten shortly after tossing to maintain crispness.
