Ingredients
Blondies
- 110 g butter
- 125 g white chocolate chips
- 150 g granulated sugar
- 2 eggs (room temperature)
- 2 tsp vanilla extract
- 160 g all-purpose flour
- 1/4 tsp salt
- 3 tbsp freeze-dried strawberry powder (about 25 g of freeze-dried strawberries before blending)
Strawberry Glaze
- 115 g powdered sugar
- 2 tsp freeze-dried strawberry powder
- 1 1/2 tbsp water
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 160ºC (325ºF) using a conventional setting. Line an 8x8 inch (20x20 cm) square baking pan with parchment paper to prevent sticking.
- Melt Butter and Chocolate: In a bowl, melt the butter, then add white chocolate chips and stir until the chocolate is completely melted and the mixture is smooth.
- Add Sugar: Incorporate the granulated sugar into the butter and chocolate mixture and whisk with an electric mixer until fully combined.
- Mix Eggs: Add the eggs to the mixture and beat on high speed for 1-2 minutes until the batter turns light and fluffy.
- Add Vanilla: Stir in the vanilla extract until just combined.
- Combine Dry Ingredients: Sift together the all-purpose flour, salt, and freeze-dried strawberry powder, then gently fold this dry mixture into the wet batter until just combined, being careful not to overmix.
- Pour Batter into Pan: Transfer the blondie batter to the prepared pan and smooth the top evenly with a spatula to ensure even baking.
- Bake: Bake in the preheated oven for 32-35 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs.
- Cool: Remove from the oven and let the blondies cool completely in the pan on a cooling rack.
- Remove from Pan: Once completely cooled, lift the blondies out of the pan using the parchment paper and place them on a serving dish.
- Make Strawberry Glaze: In a small bowl, combine the powdered sugar, freeze-dried strawberry powder, and water. Mix until smooth and glossy.
- Glaze Blondies: Pour the strawberry glaze over the cooled blondies and spread evenly. Optionally decorate with slices of freeze-dried strawberries. Let the glaze set at room temperature, or refrigerate to speed up the setting process.
- Serve: Once the glaze is firm, cut the blondies into squares and serve.
Notes
- Ensure eggs are at room temperature for better incorporation and fluffiness in the batter.
- Do not overmix the batter once the dry ingredients are added to maintain a tender texture.
- The freeze-dried strawberry powder adds concentrated strawberry flavor without adding moisture.
- The glaze can be stored in the refrigerator and the blondies should be kept covered to retain freshness.
- For a chunkier strawberry flavor, sprinkle additional freeze-dried strawberry pieces over the glaze before it sets.
