  • 30 Gluten-free Golden Oreos (1 12-ounce package)
  • 1 cup freeze-dried strawberries
  • 3.5 ounces dairy-free cream cheese
  • 2 cups dairy-free white chocolate chips

Instructions

  1. Pulse cookies and strawberries: In a food processor, pulse the gluten-free Oreos and freeze-dried strawberries until they become fine crumbs. Set aside 2 tablespoons of this crumb mixture for garnish later.
  2. Add cream cheese and mix: Cut the dairy-free cream cheese into smaller cubes and add to the remaining crumbs in the food processor. Pulse until the mixture combines into a large ball that holds together but isn't overly sticky. Adjust by adding more cream cheese if too dry or more crumbs if too wet.
  3. Form truffle balls: Using about 1 tablespoon of the mixture, roll into small balls. Place these on a tray sprayed with cooking spray to prevent sticking. Freeze the balls for 30 minutes to 1 hour until firm.
  4. Melt chocolate chips: Melt the dairy-free white chocolate chips either in the microwave in short bursts or on the stove over low heat until smooth.
  5. Dip truffles in chocolate: Remove the frozen truffle balls from the freezer. Using toothpicks, dip each ball into the melted chocolate to coat completely. Place dipped truffles back on the tray. Use a small dab of melted chocolate to cover the toothpick holes afterward.
  6. Decorate and set: Immediately drizzle leftover melted chocolate over the truffles and sprinkle with the reserved crumb and strawberry mixture. Allow the chocolate coating to set before serving.
