Ingredients
Butter and Sugar
- ½ cup butter (divided)
- ¾ cup brown sugar (divided)
Fruit
- 1 ½ cups strawberries (washed, stems removed)
Dry Ingredients
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
Wet Ingredients
- ½ cup whole milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat your oven to 350ºF (180ºC) to prepare for baking the cobbler cake.
- Melt Butter: Melt half of the butter using a microwave or small pot on the stovetop, then set it aside to cool slightly.
- Mash Strawberries: In a bowl, combine the whole strawberries with half of the brown sugar (about 75 grams). Use a fork to mash the berries gently to release their juices, then set this mixture aside.
- Mix Dry Ingredients: In a medium bowl, whisk together the remaining brown sugar, all-purpose flour, baking powder, and salt to create an even dry mixture.
- Prepare Batter: Make a well in the center of the dry ingredients and add the cooled melted butter, whole milk, and vanilla extract. Stir thoroughly until a thick batter forms and there are no visible flour pockets.
- Prepare Baking Dish: Place the remaining butter into an 8-inch (20-cm) round or square baking dish. Put the dish in the oven for 5 to 10 minutes until the butter is hot and bubbling.
- Assemble Cake: Carefully remove the hot baking dish from the oven. Spoon the thick batter evenly over the bubbling butter and gently smooth the surface. Then spread the mashed strawberries along with their juices evenly on top of the batter.
- Bake: Return the dish to the oven and bake for 55 to 60 minutes, or until a toothpick or cake tester inserted into the cake comes out clean.
- Cool and Serve: Once baked, transfer the cobbler cake to a wire rack and let it cool slightly. Serve warm, optionally topped with whipped cream or ice cream for an extra indulgent touch.
Notes
- Be careful when handling the hot baking dish to avoid burns.
- Mashing the strawberries releases natural juices that keep the cobbler moist and flavorful.
- For best results, ensure the melted butter is cooled slightly before adding to the batter to prevent curdling.
- This cobbler cake is delicious served warm but can also be enjoyed at room temperature.
- Substitute whole milk with a milk alternative to make it dairy-free, but the texture and flavor may slightly differ.
