This Strawberry Cream Cheese Frosting is a luscious, creamy topping made with fresh strawberries, smooth cream cheese, and buttery sweetness. It boasts a natural strawberry flavor with a hint of vanilla, sweetened to perfection and ideal for cupcakes, layered cakes, or even as a delightful filling. The frosting is made from scratch by reducing fresh strawberries to a thick jam, then incorporating it into a classic cream cheese and butter frosting base.

  • Total Time: 35 minutes
  • Yield: Approximately 2 cups of frosting, enough for frosting 12 cupcakes or a two-layer cake

Ingredients

Strawberry Reduction

  • 1 cup chopped fresh strawberries
  • 1 tablespoon granulated sugar
  • A splash of water (as needed)

Frosting Base

  • 8 tablespoons (4 ounces) unsalted butter, at room temperature
  • 8 ounces cream cheese, at room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar

Instructions

  1. Make Strawberry Reduction: Combine the fresh strawberries, granulated sugar, and a splash of water in a small saucepan. Cook over medium-low heat, stirring every few minutes and lowering the heat as needed to prevent burning. Continue cooking until the mixture reduces to about 1/4 cup and thickens into a jam-like consistency, approximately 20-30 minutes. Add a splash of water if it gets too dry during cooking.
  2. Cool the Mixture: Scrape the strawberry jam out of the saucepan into a separate bowl and allow it to cool completely before using in the frosting.
  3. Beat Butter and Cream Cheese: Using an electric mixer, beat together the softened butter and cream cheese on high speed until the mixture is smooth and creamy, about 2-3 minutes.
  4. Add Strawberry and Vanilla: Add the cooled strawberry reduction and vanilla extract to the butter and cream cheese mixture, continuing to beat on medium-high speed until thoroughly combined and smooth.
  5. Incorporate Powdered Sugar: Gradually stream in the powdered sugar while beating on low speed to avoid a sugar cloud, then increase speed to medium-high and beat until the frosting is smooth, creamy, and free of lumps.
  6. Use or Store: Use this frosting to top cupcakes, frost cake layers, or fill pastries. It can also be placed in a plastic storage bag and frozen for up to 3 months for future use.

Notes

  • Ensure the cream cheese and butter are at room temperature to achieve a smooth frosting.
  • The strawberry reduction must be cooled completely before mixing to prevent melting the frosting.
  • You can adjust the sweetness by modifying the amount of powdered sugar used.
  • Freezing the frosting can make it easier to pipe, just allow it to thaw slightly before use.
  • If fresh strawberries are not available, frozen strawberries can be used but thaw and drain excess liquid before cooking.
