This luscious Strawberry Poke Cake is a crowd-pleaser dessert featuring a moist white cake infused with sweet strawberry gelatin. Soft whipped topping and fresh strawberries complete this delight. Perfect for parties or simple family treats, it combines easy preparation with guaranteed deliciousness.

  • Total Time: 4 hours 55 minutes
  • Yield: 12 servings

Ingredients

Cake Ingredients

  • 1 (14.25 to 15.25-ounce) box white cake mix (plus ingredients listed on box)

Gelatin Mixture

  • 1 3-ounce box (4-serving size) Jell-O® strawberry-flavored gelatin
  • 1 cup boiling water

Toppings

  • 1 (8-ounce) tub whipped topping (Cool Whip) or 2 cups whipped cream or whipped fluffy white frosting
  • 12 fresh strawberries, cut in half

Instructions

  1. Prepare the Cake: Follow the instructions on the white cake mix box, preparing the batter accordingly. Pour into a 9x13-inch baking dish and bake as directed. After baking, allow the cake to cool for 15 minutes.
  2. Poke the Cake: Using the handle of a wooden spoon or a similar object, poke holes about every inch into the cake, pressing halfway through. Set the cake aside.
  3. Dissolve the Gelatin: In a medium bowl, place the strawberry-flavored gelatin powder and pour 1 cup of boiling water over it. Whisk thoroughly until the gelatin is fully dissolved.
  4. Pour Gelatin Over Cake: Carefully pour the dissolved gelatin evenly over the surface of the cake, allowing it to seep into the holes. Let the cake cool completely on a cooling rack, approximately 1 hour.
  5. Chill the Cake: Refrigerate the cake for 3 to 4 hours to set the gelatin and flavors fully.
  6. Add Toppings and Serve: Just before serving, spread whipped topping evenly over the cake. Garnish with halved fresh strawberries, placing one for each serving.

Notes

  • Use high-quality fresh strawberries for the best flavor and appearance.
  • Ensure the cake is cooled enough before pouring gelatin to avoid sinking or melting the gelatin.
  • You may substitute whipped topping with fresh whipped cream or fluffy white frosting depending on preference.
  • This cake is best served chilled but can be stored in the refrigerator for up to 3 days.
  • For a more intense strawberry flavor, consider adding a teaspoon of strawberry extract to the cake batter.
