This Strawberry Popsicle Recipe combines creamy vanilla pudding with fresh pureed strawberries to create a luscious and refreshing frozen treat. Made with just a few simple ingredients, including instant vanilla pudding mix, whole milk, and ripe strawberries, these popsicles offer a perfect balance of sweetness and fruitiness. Easy to prepare and fun to enjoy, they’re an ideal homemade dessert to cool off on warm days.

  • Total Time: 6 hours 15 minutes
  • Yield: 6 popsicles

Ingredients

Strawberry Puree

  • ½ cup pureed strawberries (about 10-12 strawberries)
  • 1 tbsp granulated sugar

Vanilla Pudding Mixture

  • 3.4 oz instant vanilla pudding mix
  • 2 cups whole milk

Instructions

  1. Prepare Strawberry Puree: Puree the strawberries until completely smooth using a blender or food processor, then stir in the granulated sugar until fully combined. Set this mixture aside for layering later.
  2. Make Vanilla Pudding Mixture: In a bowl, whisk together the instant vanilla pudding mix and whole milk until the pudding mix dissolves and combines well. Let the mixture sit for about 5 minutes to thicken.
  3. Layer the Popsicles: Add about 1 to 2 tablespoons of the pudding mixture into each popsicle mold, followed by 1 tablespoon of the strawberry puree. Repeat this layering one more time, ensuring there are three layers of pudding and two layers of strawberry puree. Top off each mold with the remaining pudding mixture. Gently tap the molds on a flat surface to remove any air bubbles.
  4. Insert Sticks and Freeze: Insert popsicle sticks into the center of each mold. Freeze the molds for at least 6 hours or until the popsicles are completely solidified.
  5. Remove and Store: To unmold the popsicles, run the popsicle molds under warm water for a few seconds to loosen them, then gently pull out the popsicles. Store the popsicles in an airtight container in the freezer until ready to serve.

Notes

  • You can substitute whole milk with any milk of your choice, but whole milk provides the creamiest texture.
  • For a stronger strawberry flavor, increase the amount of strawberries or reduce the sugar accordingly.
  • If you don’t have popsicle molds, use small paper cups and wooden sticks as an alternative.
  • Ensure the pudding mixture is well combined and slightly thickened before layering to prevent mixing.
  • Allow the popsicles to freeze fully to ensure they hold their shape when removed from the mold.
