This Strawberry Shortcake recipe features two easy biscuit options—traditional cut-out biscuits and quick drop biscuits—paired with sweet macerated strawberries and homemade whipped cream. Perfectly golden biscuits topped with juicy strawberries soaked in sugar syrup and fluffy cream make for a classic and simple dessert that requires no advanced baking skills.

  • Total Time: 45 minutes
  • Yield: 9-14 servings depending on biscuit choice

Ingredients

Traditional Biscuits (makes 14 small biscuits)

  • 400 g (about 3 cups) all-purpose flour
  • 2 tablespoons (30 g) sugar
  • 3/4 teaspoon fine salt
  • 1.5 tablespoons baking powder
  • 1 stick (114 g) unsalted butter, cut into cubes and chilled
  • 1 cup (240 ml) milk

Drop Biscuits (makes 9 small shortcakes)

  • 250 g (about 2 cups) all-purpose flour
  • 2 tablespoons (30 g) sugar
  • 1/2 teaspoon fine salt
  • 1 tablespoon baking powder
  • 4 tablespoons (55 g) unsalted butter, cut into cubes and chilled
  • 1/2 cup (120 ml) milk
  • 1/4 cup (60 g) sour cream

Strawberry & Cream Filling (enough for 9-14 biscuits)

  • 1 lb (450-500 g) strawberries
  • 3 tablespoons (45 g) sugar (fine granulated)
  • 1 cup (240 ml) heavy whipping cream
  • Optional: 1 tablespoon powdered sugar
  • Optional: 1 teaspoon vanilla extract
  • Optional: Powdered sugar for dusting

Instructions

  1. Prepare Traditional Biscuits: Preheat your oven to 425°F (220 °C). In a bowl, combine flour, sugar, salt, and baking powder. Cut the chilled butter into the dry ingredients using a knife, pastry blender, or food processor until the mixture looks like coarse crumbs. Gradually add the milk while stirring with a spoon until just combined.
  2. Shape Traditional Biscuits: Turn the dough onto a floured surface, gently form it into a ball, then roll it out evenly to about 1/2 inch (1.5 cm) thick. Using a cookie cutter or glass around 2.5-3 inches (7 cm) in diameter, cut out biscuits. Re-roll scraps to maximize yield, making approximately 14 biscuits.
  3. Bake Traditional Biscuits: Place the biscuits on a parchment-lined baking sheet. Bake at 425 °F (220 °C) for 10-15 minutes until they turn light golden brown. Remove and cool while you prepare the filling.
  4. Prepare Drop Biscuits: Preheat oven to 425 °F (220 °C). In a bowl, mix flour, sugar, salt, and baking powder. Cut in cold butter until crumbly. Stir in milk and sour cream until dough forms.
  5. Shape Drop Biscuits: Drop spoonfuls or roll dough into balls onto a parchment-lined baking sheet. You can flatten them slightly or leave as is. This will yield about 9 biscuits.
  6. Bake Drop Biscuits: Bake at 425 °F (220 °C) for 10-15 minutes until tops are light golden brown. Remove and set aside to cool while making the filling.
  7. Prepare Strawberries: Wash, hull, and slice or quarter the strawberries. Toss them in a bowl with sugar. Cover and let sit for at least 30 minutes to create a syrupy sauce. Refrigerate if preparing more than an hour in advance.
  8. Whip Cream: Using a mixer, whip the heavy cream until soft peaks form. Optionally add 1 tablespoon powdered sugar and 1 teaspoon vanilla extract before whipping if desired.
  9. Assemble Strawberry Shortcake: Split the biscuits and spoon the syrupy strawberries over the bottom halves. Top with a generous dollop of whipped cream, then cover with the top half of the biscuit. Optionally dust with powdered sugar and serve immediately.

Notes

  • Using cold butter is essential for flaky biscuits.
  • You can choose between traditional biscuits or the quicker drop biscuit method depending on how much time you have.
  • Allow strawberries to macerate to draw out their natural juices for a delicious sauce.
  • Whipped cream can be sweetened and flavored with vanilla or left plain based on preference.
  • Serve shortcakes fresh for best texture; biscuits may soften if stored after assembly.
