Ingredients
Salad Ingredients
- 5 ounces fresh spinach
- 1 cup thinly sliced strawberries
- ⅓ cup thinly sliced red onion
- ½ cup toasted pecans
- 2 ounces feta cheese, crumbled
- Sea salt and freshly ground black pepper, to taste
Dressing
- 1 recipe Poppy Seed Dressing (see recipe or use your favorite store-bought)
Instructions
- Combine Base Ingredients: In a large bowl, place the fresh spinach, thinly sliced strawberries, and red onion. These fresh ingredients are the foundation of the salad and should be combined gently to keep the spinach leaves intact.
- Add Dressing and Toss: Pour some of the poppy seed dressing over the spinach mixture and toss gently to coat all the ingredients evenly. Start with a small amount of dressing and add more later as desired.
- Add Crunch and Cheese: Sprinkle the toasted pecans and crumbled feta cheese over the salad. Gently toss again to incorporate without breaking up the feta too much.
- Season and Serve: Taste the salad and add sea salt and freshly ground black pepper according to your preference. Add more poppy seed dressing if needed. Serve immediately to enjoy the fresh, vibrant flavors.
Notes
- Toast pecans lightly in a dry skillet for 3-5 minutes until fragrant to enhance their flavor.
- The poppy seed dressing can be homemade or store-bought; homemade versions offer a fresher taste.
- For added protein, grilled chicken or tofu can be included.
- Serve immediately after tossing to prevent spinach from wilting.
- This salad pairs beautifully with grilled meats or as a refreshing starter on a warm day.
