Instructions
- Prepare baking dish: Lightly grease a 9x9 inch square baking dish or a 9-10 inch round cake or pie pan and set aside.
- Mix dry ingredients: In a large bowl, whisk together the flour, granulated sugar, and salt until well combined.
- Warm milk and butter: In a microwave-safe bowl, heat the milk and butter in 20-second increments until the butter melts and the mixture is warm to the touch (~110℉), not hot.
- Add yeast: Whisk in the instant yeast until fully dissolved. Pour this yeast mixture into the dry ingredients, add the egg, and stir with a sturdy wooden spoon until a soft, sticky dough forms.
- Knead dough: Turn the dough onto a lightly floured surface and knead with floured hands for 3 to 5 minutes until the dough is smooth but not sticky.
- First rise: Transfer the dough to a lightly greased bowl, cover lightly, and let it rise for 10 minutes.
- Prepare strawberry powder: Pulse freeze-dried strawberries in a blender or food processor until finely ground. Divide the powder into two portions: 0.6 ounces (about 7 teaspoons) and 0.2 ounces (about 2 teaspoons), set aside.
- Roll out dough: On a lightly floured surface, roll the dough into a 14x9 inch rectangle.
- Spread filling: Evenly spread room temperature butter across the dough. In a small bowl, combine granulated sugar and 0.6 ounces of strawberry powder, then sprinkle evenly over the butter. Gently pat to adhere.
- Form rolls: Starting from the long 14-inch side, roll the dough tightly into a log. Using a serrated knife, cut into 9 even rolls and place them in the prepared baking dish.
- Second rise: Lightly cover the rolls and let them rise at room temperature for 60-90 minutes, or until doubled in size.
- Preheat oven: Set oven to 350℉ (175℃).
- Bake rolls: Place the baking dish into the oven and bake uncovered for 26-32 minutes until the tops are golden brown and the internal temperature reaches 195-200℉. If browning too fast, tent with foil.
- Prepare icing: While rolls bake, whisk together confectioner's sugar, 0.2 ounces strawberry powder, milk, and vanilla extract until smooth.
- Glaze and serve: Spread the icing over warm rolls using a knife and serve immediately for best flavor.
